Preheat oven to 350ºF. Spray an 8 1/2 x 4 1/2-inch loaf pan with cooking spray, then line with parchment paper.
In a bowl, mix cottage cheese, sugar and eggs together using an electric mixer. 2/3 cup small-curd cottage cheese, ½ cup granulated sugar, 3 large eggs
Stir in finely chopped walnuts, sifted flour and baking powder. ½ cup chopped walnuts, 1 ½ cup all-purpose flour, 2 teaspoons baking powder
Pour the mixture into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
Let it cool 10 minutes before serving. Serve sliced butter & jam. It's excellent as toast!
