Pumpkin french toast casserole is a great breakfast recipe in the fall! Soft cubed baguette tossed with pumpkin puree, spices, and topped with a sweet and crunchy streusel topping.
Spray a 9x13 casserole dish with cooking spray. Preheat the oven to 350º Fahrenheit.
Place the bread cubes in the prepared pan.
In a large bowl, whisk together milk, heavy cream, eggs, sugar, pumpkin, vanilla, and cinnamon. Blend thoroughly.
Pour over the bread cubes, and press into pan to cover/soak. Set aside.
In another bowl, cut together butter, flour, cinnamon, and brown sugar until you have coarse texture. Toss in pecans and mix thoroughly.
Sprinkle the topping over the casserole, making sure to cover as much as you can.
Spray a piece of foil with cooking spray, then cover the casserole.
Bake at 350 for 25 minutes, then uncover and cook an additional 20 minutes or until cooked through.
Serve with maple syrup.
