2large red potatoes(chopped into 1-inch cubes, about 3 cups)

Instructions
In a large skillet over medium high heat, melt butter and warm oil. 3 tablespoons salted butter, 1 teaspoon olive oil
Add in potatoes, onions, and peppers. Sauté for 4 minutes. 2 large red potatoes, 2 tablespoons white onions, 2 tablespoons red peppers, 2 tablespoons green peppers
Stir in chicken broth, parsley, and salt and pepper. Cover and cook over medium-low heat for 10 minutes. 3 tablespoons chicken broth, 2 teaspoons fresh parsley, Salt and black pepper to taste
Remove lid after 10 minutes. Stir and continue cooking a few minutes or until liquid absorbs and the potatoes are tender.
