Preheat the oven to 350º Fahrenheit. Line a 9-inch pie pan with an unbaked crust and flute the edges. 1 9" unbaked pie shell
In a large bowl, combine the first 7 ingredients and whisk well. 3 large eggs, 2/3 cup granulated sugar, 1 cup light brown sugar, 2 tablespoons salted butter, 2/3 cup old fashioned rolled oats, 2/3 cup half and half, 1 teaspoon vanilla extract
Pour into the prepared pie shell. Bake on the bottom oven rack for 50 minutes or until the pie is cooked through. The center should look set.
Serve warm with ice cream.
