Mozzarella Tomato Salad is an easy side dish to complement your summer picnics. You'll love the combination of veggies, pepperoni and cheese with a homemade vinaigrette.
In a bowl, combine the tomatoes, onion, cucumber and olives. 3 cups diced Roma tomatoes, 1/2 cup chopped red onion, 1 cup chopped cucumber, 2.25 ounces sliced olives
Cut the string cheese into bite size pieces. Add to the bowl along with the sliced pepperoni. Set aside. 6 string mozzarella cheese, 1/3 cup sliced pepperoni
In a small bowl, mix the vinegar, oil, garlic and seasoning. Pour over the salad and mix to coat. 3 tablespoons red wine vinegar, 3 tablespoons olive oil, 1/2 teaspoon minced garlic, 1/2 teaspoon Italian seasoning
Refrigerate the salad until serving.
