Cut 3 potatoes into ¼- ½” matchsticks and rinse under water to remove some of the starch. I kept the peel on, but you can choose to peel your potatoes.
Combine salt and ice-cold water into a bowl.
Place chopped potatoes into bowl and soak for 5-10 minutes.
Pat potatoes dry and place in a dish and work in batches by laying potatoes in a single layer. Microwave covered for 3-4 minutes or until almost fork tender.
Pour vegetable oil onto a sheet pan or 9x13 inch dish.
Place pan in oven and turn on broiler on low. Broil oil on low for 2-3 minutes or until oil has heated. Watch it closely!
Sprinkle potatoes with garlic salt, oregano, and blackened seasoning
Take pan out of oven and carefully arrange potatoes on top of oil in a single layer.
Place fries in oven on middle rack and cook for 5 minutes on low broil or until golden brown.
Turn fries over and cook for an additional 3-5 minutes or until golden brown and fork tender.
Notes
For even crispier fries, turn on oven to 350 degrees and cook fries for 20 minutes or until they have reached your desired crispiness.
