In a small saucepan, heat the onion, honey, sugar, soy sauce, butter, garlic and mustard over medium heat. 1 small onion, 1/2 cup honey, 1/2 cup dark brown sugar, 1/3 cup soy sauce, 1/4 cup salted butter, 1 tablespoons minced garlic, 2 teaspoons ground mustard
Allow the mixture to come to a low boil and simmer for 5 minutes, stirring often. Remove the sauce from the heat.
Line an 11x15" pan with foil or parchment paper for easy clean up. Place the wings in a single layer on the pan. Pour 1/2 cup of honey garlic sauce over the wings. 3 pounds jumbo chicken wings
Preheat the oven to 425ºF. Bake the wings in the preheated oven for 25 minutes. Then pour off any extra chicken juices if desired (this will allow the skin to get a little crispier than if it would continue to cook in the juices. This step is optional!).
Turn the wings over and brush them with an additional 1/4 cup honey garlic sauce. Bake them for another 15 minutes.
If you'd like wings crispier, broil the chicken wings on low for 5 minutes. Toss the wings with additional honey garlic sauce once they are done.
Serve immediately or place the wings in a slow cooker on warm until you are ready to serve them.
