Ingredients

Fried Green Tomatoes

crushed pork rinds

grated parmesan cheese

Instructions
Cook bacon on stove top until crispy. Drain bacon and save bacon fat.
Crush pork rinds into a fine powder.
Add parmesan cheese, salt and pepper to pork rinds.
Slice a tomato into 4 large slices.
Crack the egg into bowl and whisk with a fork.
Dip the tomato slices into the egg mixture and then into the pork rind mixture.
Heat the bacon fat in the skillet over medium low heat.
Add coated tomatoes to the cast iron skillet with bacon fat.
Cook over medium heat for about 2.5 minutes on each side depending on the thickness of each slice, until golden brown.
Place the tomato on a paper-towel lined plate to drain.
Prepare the salad by placing the lettuce, cherry tomatoes, cucumbers, onion and carrots in 4 bowls or plates.
Top each plate with 2 slices of bacon and 1 fried green tomato.
Serve immediately.
