Place the spring lettuce mix in a large bowl or platter.
Top with the sliced peaches and avocado.
Then sprinkle the top with the corn, sliced onion and feta cheese.
In a small bowl or a mason jar, mix all of the dressing ingredients. Whisk or shake to mix.
Pour dressing over the entire salad, or individual servings. Then serve immediately.
This dressing gets runny as it sits, so make it close to the time you want to serve it. If you need less, then make 1/2 recipe.
Store any leftovers in the fridge. This salad isn't great for leftovers, but I have eaten it later the same day.
