Use garden tomatoes and cucumbers in an easy summer salad recipe. This cucumber tomato salad has a simple balsamic vinegar dressing.

Ingredients

tomatoes
(I used heirloom tomatoes)

medium red onion
(sliced)
½
cucumber
(sliced)

teaspoon
salt

teaspoon
black pepper
For the Dressing:
⅛
cup
balsamic vinegar
¼
cup
olive oil

teaspoon
salt

teaspoon
black pepper
Instructions
Wash and pat dry tomatoes.
Cut tomatoes in large slices.
Arrange all the vegetables in a bowl or on a platter.
Sprinkle the tops with salt and pepper.
In a small bowl, whisk together the ingredients for the dressing.
Pour dressing over salad and chill for 30 minutes.
Serve cold.
