An old recipe that has stood the test of time! This Chicken Divan Casserole recipe is loaded with broccoli, chicken, cheese and french fried onions. A family favorite!
4cupsdiced cooked chicken breasts(about 2 pounds before cooking)
½cupfrench fried onions
1sleeve of Ritz crackers(about 35 crackers, crushed)
Instructions
Preheat the oven to 350º Fahrenheit. Spray a 9x13 baking dish with cooking spray.
In a small bowl, combine the mayonnaise, chicken soup, cheeses, lemon juice, curry and garlic powder. Stir well. 1 cup mayonnaise, 21 ounces cream of chicken soup, ½ cup shredded Parmesan cheese, ½ cup shredded sharp cheddar cheese, 1 tablespoon fresh lemon juice, ½ teaspoon curry, ½ teaspoon garlic powder
Spoon about ½ cup of the mixture into the bottom of the prepared pan and spread it around. Spread the broccoli florets on the bottom of the pan. Top with the diced chicken. Sprinkle with the french fried onions. 18 ounces frozen baby broccoli florets, 4 cups diced cooked chicken breasts, ½ cup french fried onions
The spread the remaining sauce over the chicken, covering the top of the casserole. Sprinkle the cracker crumbs over the casserole. 1 sleeve of Ritz crackers
Cover with aluminum foil. Bake for 30 minutes.
Uncover and bake for 5 more minutes or until heated through.
Notes
Cream of celery soup or cream of mushroom soup work as well.
Use fresh broccoli if desired.
If you would like the creamy gravy a little thinner, add 1/2 cup chicken broth to the wet ingredients.
