Preheat oven to 350º Fahrenheit. Spray a 9x13" baking dish with cooking spray.
In a medium bowl lightly beat the eggs.
Add the cream, sugar, almond extract and cinnamon, mix well.
Put the bread cubes, diced apple and ½ cup of almonds in a large bowl.
Pour the cream mixture over the bread cubes and stir gently.
Let sit to soak for 40 minutes, stirring occasionally.
Pour the pudding mixture into the prepared dish.
Sprinkle with the remaining almond slices.
Bake for 45 minutes.
Serve warm.
This pudding is wonderful on its own but can also be served topped with ice cream, whipped cream, or drizzled with maple syrup.
