I couldnโt help but share this delicious walnut bread recipe with you today! Itโs so easy to make. Only 6 ingredients and the prep takes less than 10 minutes. Isnโt that great?
Imagine its early morning. You get up and grab a few slices of this cottage cheese bread. First you toast it, then you slather it with butter and your favorite jam. It’s lightly sweet and mild flavor make it perfect alongside a cup of hot tea or coffee.
Cottage cheese in bread?
Cottage cheese has been having its moment the past year. Home cooks have fallen in love with this delicious dairy product. We ourselves have made macaroni and cheese with cottage cheese and cottage cheese pancakes.
But why all the fuss about cottage cheese? Well, it’s high protein (I’m a huge fan of Good Culture cottage cheese) and low in fat. It has a mild flavor and creamy texture. And it can often replace sour cream in many recipes, lowering fat and adding protein.
Ingredients Needed
- Cottage cheese. Use full fat cottage cheese or low fat cottage cheese, but I don’t love it with fat free cottage cheese.
- Flour. This has just a small amount of all-purpose flour. Gluten-free all-purpose flour would work as well.
- Sugar. This calls for half cup of sugar, which gives the bread a lightly sweet flavor. Try lowering it to ⅓ cup for a little less sweet.
- Baking powder. My favorite baking powder is from Bob’s Red Mill. It’s aluminum free.
- Eggs. To add protein and structure to the bread.
- Walnuts. Finely chopped nuts blend with the bread well.

How to Make Walnut Cottage Cheese Bread
I prefer small curd cottage cheese in this cottage cheese bread recipe. If you have large curd, you could run it through a food processor or blender for just a couple seconds to make the curds smaller.
- Prepare. Preheat oven to 350ยบF. Spray an 8 ½ x 4 1/2-inch loaf pan with cooking spray, then line with parchment paper.
- Mix the wet ingredients. In a bowl, mix cottage cheese, sugar and eggs together using an electric mixer.ย
- Add the dry ingredients. Stir in finely chopped walnuts, sifted flour and baking powder.
- Bake the bread. Pour the dough into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
Recipe Variations
- Add 1 teaspoon Italian seasoning, ½ teaspoon garlic powder and ¼ teaspoon black pepper for an Italian flair.
- Instead of walnuts, try adding 2 tablespoons poppy seeds, 2 tablespoons sesame seeds or ½ cup sunflower seeds instead of walnuts.
Storage Instructions
Store the bread wrapped tightly in plastic wrap at room temperature. For longer storage, freeze the loaf for up to 6 weeks. Allow the bread to fully thaw before unwrapping it.

- Pour the mixture into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool 10 minutes before serving. Serve sliced butter & jam. It's excellent as toast!

Has anyone tried this in a bread machine?
I really enjoyed this recipe. I have to bake gluten-free for my family, so I used King Arthur’s Measure for Measure flour and it came out great. I also am trying to reduce the amount of sugar I use and found that 2 TB, along with a pinch of nutmeg, was plenty in this recipe.
