Hi everyone! Kristie here again from The Sweet & Simple Kitchen & Iโ€™m so excited to be sharing one of my favourite warming winter breakfast recipes with you all today!

So I donโ€™t know about you all, but I am completely addicted to oatmeal; I actually eat a bowl every morning & would probably be content to eat a warm bowl oaty goodness for lunch and dinner too. Is that a little bit weird?

Most of the time when people find out that I happily eat oatmeal everyday they look at me like Iโ€™m a little bit crazy โ€“ like there is no possible way that somebody could ever find eating oatmeal that enjoyable.

Long story short; I have kind of become obsessed with changing the way these oatmeal haters feel about a bowl of oats.

I think the main problem is that when most people hear oatmeal, they immediately think about a bland bowl of plain oatmeal with absolutely nothing else going on with it โ€“ and even I will admit that I donโ€™t really want to eat oatmeal that way either. But who says oatmeal has to be boring like that? Not me!

Personally I think that oatmeal can be so delicious, that you might want to eat it for dessert. Thatโ€™s right โ€“ I said dessert. Okay, do you think Iโ€™m crazy now? Donโ€™t worry – once you try this Vanilla Chai Baked Oatmeal, you will totally understand my oatmeal for dessert idea.

This oatmeal is the exact opposite of boring & bland. The steel cut oats give it the most amazing creamy texture that is almost reminiscent of rice pudding โ€“ (uhmmm hello yum!) Its loaded with all kinds of amazing goodies like spices, toasted pecans, sweet raisins & vanilla, which make it so flavourful.ย  Oh โ€“ and not to mention, it is naturally sweetened with just a touch of maple syrup, so you can absolutely feel good about every bite.

This is such an easy, warming breakfast that is perfect for chilly winter mornings. It takes just minutes to whip it up & get it in the oven to bake, and it makes your house smell a-maz-ing. And a sprinkling of vanilla sugar isn’t too bad either.

Itโ€™s also super easy to adapt & make seasonal additions to; I love to add fresh berries in the summer or apples & pears in the fall. You can change up the spices, or swap out the raisins for your favourite dried fruit. No matter what you do to this recipe, it will always be a crowd pleaser.

Vanilla Chai Baked Oatmeal

Ingredients
 

Porridge:

  • 1 cup steel cut oats *
  • 2/3 cup toasted pecans finely chopped
  • 2 tablespoons maple syrup
  • 2 teaspoons chai spice mix
  • Pinch of salt
  • ยฝ cup raisins optional
  • 2 cups milk
  • ยฝ cup cream or sub more milk instead
  • 2 teaspoons vanilla
  • 2 tablespoons butter melted

Cinnamon Sugar Topping:

Instructions
 

  • Preheat oven to 350 degrees & grease a 9 or 10 inch round baking dish. I just used a deep dish pie plate.
  • In a large bowl, combine steel cut oats, toasted pecans, maple syrup, spices, and raisins. Mix to combine. Pour in milk, cream, vanilla and melted butter & stir to combine. Pour mixture into prepared baking dish.
  • Mix together cinnamon sugar mixture. Sprinkle evenly over the porridge mixture. Place dish in the center of your oven and bake for 55-60 minutes. The top will be golden brown and crispy.
  • Remove from oven and distribute among bowls. Serve with your favourite toppings such as milk, cream, a drizzle of maple syrup, fresh fruit etc.

Notes

* Note: you could substitute rolled oats, but just make sure you cut down your baking time to about 30-40 minutes as it will cook much faster

I have been making this oatmeal for 2 years …live it so much! I make it as written except add pecans and sugar to top after 40 minutes. I find the nuts and sugar turn crispy…yummy!!

Do not be misled by the name of this recipe. this is NOT baked oatmeal. When I began to put that much milk in there I was skeptical but went along with it. I quickly realized that this simply an oatmeal recipe that you bake in the oven. real baked oatmeal is solid and has eggs in it. Definitely will not be making this again.

So incredibly delicious. I crave this every morning now. I made it using regular oats since that is what I had on hand and baked it for 35 minutes. Otherwise followed the directions exactly. Thanks for such an awesome recipe!

Made this for breakfast this morning and it was a hit! I prepped the dry ingredients the night before and had everything set up and ready to go. Woke up early to put it together and get it in the oven. It was so tasty and perfectly sweetened. I will be making this again and again.

Loved it! Used rolled oats (cooked ~30 minutes), golden raisins (โ€plumpedโ€ in warm water then drained before adding), half and half for the cream, 8×8 square baking dish.

Just got done eating this for brunch – absolutely fantastic! I used rolled oats per recipe note and cooked for 40 minutes. I used the 2 cups of (whole) milk, but 1/2 cup coconut milk in place of the cream. Only used half of the cinnamon sugar on top. Def a keeper!

Very good recipe. I make it often with great results. I soak the oats overnight and bake for 45 minutes. The rest all the same. Also when I have very ripe bananas I mash them and include in the mixture for variation. Love that it heats up well when I have leftovers.

In step 2, it mentions brown sugar. Brown sugar isn’t listed in the ingredients.
