A few notes about basic ingredients:
- All-purpose flour. I’ve also used all-purpose gluten free flour and it works well.
- Baking powder. Use aluminum free baking powder. Our favorite brand is Bob’s Red Mill.
- Sourdough discard. Many readers have left comments about using active sourdough starter, but I make the pancakes with sourdough discard from my fridge. Is isn’t airy or bubbly and is “runnier” than active sourdough.
What is sourdough discard?
When you start making sourdough, you either have to bake with it or discard part of the start or it will keep growing. In order to not be wasteful, you can make recipes with the sourdough discard (or “leftover sourdough starter”). These sourdough discard recipes use other leavening agents (baking powder, baking soda or yeast) to get a rise in the baked good.
How to Make Sourdough Pancakes
Make the pancakes in just 4 steps:
- In a large bowl, whisk together the flour, baking powder and soda, sugar and salt.
- Add the sourdough starter, milk, egg and oil to the top of the dry ingredients. Mix well just until combined. It’s ok if there are a couple of lumps in the batter. It’s important not to overmix.
- Grease a pancake griddle or cast iron skillet with melted butter or oil. Heat the skillet over medium-low heat. Ladle ยผ cup of batter on the hot griddle. Cook until the batter starts bubbling on top, then gently flip the pancake.
- Cook for an additional 1-2 minutes on the second side or until the pancake is cooked through and golden brown.

Ingredients
- 2 cups all-purpose flour 260 grams
- 2 teaspoons baking powder 10 grams

- 1 cup sourdough discard at room temperature, 250 grams
- 1 1/2 cups 2% milk at room temperature, 12 ounces

- I highly recommend sourdough discard for this recipe. It shouldn’t be bubbly and stretchy like active starter, but rather dense and thick, but “runny” in texture.
- The first side will take 2-3 minutes, depending on the temperature of the skillet.
- For buttermilk pancakes, replace the milk with buttermilk. This will make extra tangy pancakes.
- Add chocolate chips or chopped fresh fruit for a fun twist on traditional pancakes. Coconut oil is great for cooking pancakes! It gives them lightly crispy edges.

Do you have a general weight (in grams ideally) for the starter? A cup of starter can mean so many things and with a cup of discard I had to add another half cup of milk just to get it to a tough to work with consistency
These were extremely dense and dough-ey. I used active bubbly starter and was sadly disappointed for the second time. Is there a trick Iโm missing?

Amazing. We both agreed that these were the best pancakes I’ve made in a while, and the recipe has now been put in our official hard-back recipe book. Don’t know if this is helpful for anyone, but have a white starter and a rye starter going, and I mixed both of them together and used the combination for this recipe. Worked wonderfully. Also, I let the batter sit for about 10 minutes before using it… will definitely be making these again soon!

Worked perfectly! Cooking with the butter was difficult for me, I’m not used to it and it browned. I may try adding a little more oil and hope my non-stick pan can handle the rest. I will also make it slightly thinner because I’m trying to please kids (we add chocolate chips instead of syrup)
These turned out amazing! During this stay at home initiative I decided to take a stab at making sourdough from scratch. Now that I have an active starter, that I’ve named Frank, I started to wonder what I could do with the extra starter I was dumping before. Tried this recipe and it is AMAZING! I’m not the best of chefs, but these were super easy to make. So fluffy, not overly sweet, filling, great with a little syrup and some fruit. I loved them, and more importantly, my wife loved them.
Delicious flavor and fluffy, melt in your mouth texture. I followed the recipe for the first batch. The batter and the pancakes were pretty thick so I never saw the bubbles, even though it was cooked. For the rest of the batches, I added a splash of milk to thin out the mixture. This made the pancakes a bit thinner as well, closer to the picture of this recipe. I saved most of the batter for another day. This recipe makes a ton!

I have used this recipe a few times to make fluffy Belgian waffles. I finally used it to make pancakes. But I couldn’t leave well enough alone, I added 1 cup of old fashioned rolled oats, 1/2 cup applesauce, 1 tsp cinnamon, 1/4 tsp freshly grated nutmeg. If that was not enough, I sprinkled frozen huckleberries on top of most of them as they were cooking, the rest I sprinkled with butterscotch chips. I shouldn’t cook after biking for an hour, I go a little overboard on the calories. But oh so good!
Iโve been making these almost weekly in quarantine and loving them … I like to add some lemon zest and nutmeg and drop the sugar (served with maple syrup, fruit, or whipped cream so doesnโt seem to need it). Today I added an extra egg, separated both, whipped the whites into peaks and folded them in to the rest of the batter and made them in a waffle iron which turned out great!
Made it twice and love the way they are fluffy. First times Ruth blueberries second with walnuts. Great recipe!
