Mozzarella Tomato Salad is an easy side dish to complement your summer picnics. You’ll love the combination of veggies, pepperoni and cheese with a homemade vinaigrette.
Weโre in the height of picnic season here, friends. Whatโs your favorite picnic food? One of mine is pasta salad. The zesty Italian flavors and fresh veggies paired with the meat and cheese. Delish.
If you’re trying to lower your carb intake and increase protein and veggies, this healthy salad is for you. It is like my favorite pasta salad without the sugar and carbs. This is the recipe I’m sharing with you today.

- Texture: The texture of this tomato mozzarella salad is crisp. You have cool cucumbers and tomatoes, along with the creamy mozzarella. It’s delicious and 100% for those who love texture in their foods.
Is tomato and mozzarella salad good for you?
Yes! This is a low carb salad recipe. It is a perfect Weight Watchers summer salad. Use low fat string cheese and turkey pepperoni to lower the fat content. It makes a great antipasto appetizer.
Ingredients
This mozzarella tomato salad is versatile, but here is a list of the basic ingredients:
- Tomato. Roma or San Marzano tomatoes work perfectly for this since they are not super juicy. But any tomatoes are good, especially if they are from the garden. Think cherry tomatoes, grape tomatoes or even heirloom tomatoes.
- Cucumber. Small cucumbers without many seeds are best.
- Red onion.
- Olives. Black, sliced olives
- Cheese. I use string cheese cut into bite-size pieces, but fresh mozzarella balls work as well.
- Pepperoni. Turkey pepperoni is lower in fat, but uncured pepperoni is my go-to.
- Red wine vinegar. Or balsamic vinegar.
- Extra virgin olive oil.
- Garlic. I keep minced garlic in the fridge at all times for recipes such as this. It’s super easy to throw in a half teaspoon.
- Italian seasoning. Dried Italian seasoning works great, but you can use fresh oregano, fresh parsley and fresh basil leaves if you’d like.
How to Make Mozzarella Tomato Salad
- In a large bowl, combine the tomatoes, onion, cucumber and olives.
- Cut the string cheese into bite size pieces. Add to the bowl along with the sliced pepperoni. Set aside.
- In a small bowl, mix the vinegar, oil, garlic and seasoning. Drizzle over the salad and toss to coat. Sprinkle with salt and black pepper if you’d like.
Optional Add-ins
Wanting a variation on this salad?
- Try adding in green pepper, banana pepper, avocados or mushrooms.
- You can also try adding a teaspoon or two of our homemade pasta salad seasoning for punch flavoring.
- Switch up the cheese if you’d like. Fresh mozzarella cheese, shaved parmesan or even cubed pepper jack are options.
- Top the salad with balsamic glaze like you would a different take on a caprese salad recipe.
What to Serve with Mozzarella Tomato Salad
Serve this veggie salad with a protein such as lemon lime chicken, garlic butter steak or smoked shrimp.
You can also serve the salad with richer main dishes like creamy ranch chicken bake or pizza potatoes.
Storage Instructions
Store leftovers of this mozzarella tomato salad in an airtight container in the fridge for up to 2 days. It does not freeze well.

- 2.25 ounces sliced olives
- 6 string mozzarella cheese
- 1/3 cup sliced pepperoni
For the dressing:
- 3 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon minced garlic
- 1/2 teaspoon Italian seasoning
Instructions
- In a bowl, combine the tomatoes, onion, cucumber and olives. 3 cups diced Roma tomatoes, ½ cup chopped red onion, 1 cup chopped cucumber, 2.25 ounces sliced olives
- Cut the string cheese into bite size pieces. Add to the bowl along with the sliced pepperoni. Set aside. 6 string mozzarella cheese, ⅓ cup sliced pepperoni
- In a small bowl, mix the vinegar, oil, garlic and seasoning. Pour over the salad and mix to coat. 3 tablespoons red wine vinegar, 3 tablespoons olive oil, ½ teaspoon minced garlic, ½ teaspoon Italian seasoning
- Refrigerate the salad until serving.
