Slow Cooker Beef Tips and Gravy is a perfect meal for a cool evening. Tender chunks of beef are slow-cooked in a rich, savory gravy made from beef broth, onions, garlic, and herbs.
The slow cooker is my favorite way to prepare beef, from chuck eye roast in Mississippi pot roast to slow cooker meatloaf, beef stew, and even crockpot shepherd’s pie.
Slow cooking allows the beef to not only become tender but also it absorbs all the rich flavors from the gravy and sauces. These slow cooked beef tips and gravy are delicious served over homemade mashed potatoes or egg noodles. Get ready to fall in love with these crockpot beef tips!
Ingredients Needed
- Some grocery stores will have small cuts of steak and label them as beef tips or sirloin tips. If you can’t find sirloin tips, you can use stew meat, which will easily break down into tender beef in this crock pot recipe.
- Simple seasonings of salt, pepper, rosemary, oregano and paprika flavor this gravy well. You could also add onion powder, thyme or sage. A packet of onion soup mix or brown gravy mix are both quick options if you don’t feel like measuring out various seasonings.
- White or yellow onions are best in slow cooked beef tips and gravy.

How to Make Slow Cooker Beef Tips and Gravy
- Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes to the skillet and sear until browned on all sides, about 3-5 minutes. Do this in batches if necessary to avoid overcrowding the pan. Transfer the seared beef to the slow cooker. For easy cleanup, use a slow cooker liner!
- In the same skillet, add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1-2 minutes. Stir in the tomato paste, cooking for another 2 minutes.
- Add the beef broth, Worcestershire sauce, dried oregano, dried rosemary, paprika, salt, and black pepper. Stir to combine.
- Pour the gravy mixture over the beef tips in the slow cooker. Place the lid on and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- About 30 minutes before serving, whisk together the cornstarch with 3 tablespoons of water in a small bowl until smooth. Stir the cornstarch slurry into the slow cooker.
- Cover and cook on high for an additional 30 minutes, until the gravy has thickened.
can you leave the lid off a slow cooker to thicken gravy?
Yes, for the last 30 minutes, you can tilt the lid to allow excess steam to escape the crockpot. This will help the gravy thicken.

Ingredients
- 2 tablespoons olive oil
- 2 pounds sirloin tips or beef stew meat cut into 1-inch pieces
- 1 large onion diced
- 3 cloves garlic minced
- 3 tablespoons tomato paste
- 2 cups beef broth
- 1/4 cup Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons cornstarch used for slurry
- 3 tablespoons water
- Fresh parsley chopped (for garnish)
Instructions

- Close the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.

Notes
- Searing the beef before slow cooking adds depth of flavor, but if you’re short on time, you can skip this step. Additionally, to save time, you can just whisk the gravy ingredients in a bowl and pour it over the beef. Exclude the cornstarch until later.
- Add chopped carrots, mushrooms, or bell peppers to the slow cooker for extra veggies and to add more flavor to the gravy.
- If you would like a deeper and richer flavor, substitute ½ of beef broth for a dry red wine.
- For this recipe you can use stew meat, sirloin tips or any other sturdy cut of meat.ย
