We’re crazy about our fresh salsa in this house. Normally we enjoy our homemade Pico de Gallo recipe, but sometimes we crave fruit salsa so like mango salsa or peach salsa. I can eat it with a spoon, no chips needed!

Last fall we got adventurous and decided to try a new fresh salsa with pineapple. A sweet & spicy one. This fresh pineapple jalapeño salsa recipe has a lot of the same flavors as our favorite pico recipe does, but instead of a base of tomatoes, it has fresh, juicy pineapple.

What is pineapple salsa made of?

  • Fresh pineapple. If you have to use canned pineapple that will work, but fresh is delicious.
  • Jalapeño pepper. Dice that pepper up finely for even heat.
  • Red onion. Red onion gives a pretty color contrast.
  • Cilantro, salt and pepper. All to add flavor!
  • Lime juice. Use one large lime to get that fresh lime juice.

How to Make Pineapple Jalapeño Salsa

This recipe is as simple as ever.

  • Dice the veggies, fruit and cilantro.
  • Mix all of the ingredients in a bowl.

This is best if the fresh pineapple salsa chills in the fridge for an hour before serving. This will give it time for the flavors to blend.

Serving Ideas

So how do we like to serve this bright, summery pineapple salsa recipe? Frankly, I could also just eat this with a spoon which equals a pretty healthy snack. In fact, if you’re plugging through a Whole30 or giving eating a Paleo diet, this naturally sweet salsa may just be the fix you need.

Ingredients
 

  • 2 cups diced fresh pineapple
  • 1/4 cup diced jalapeno pepper
  • 1 cup diced red onion
  • 1/4 cup freshly snipped cilantro
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Combine all of the salsa ingredients in a small bowl and mix well. 2 cups diced fresh pineapple, ¼ cup diced jalapeno pepper, 1 cup diced red onion, ¼ cup freshly snipped cilantro, 2 tablespoons lime juice, ¼ teaspoon salt, ¼ teaspoon black pepper
  • Cover and refrigerate until serving. Store leftovers in an airtight container in the fridge for up to 3 days.
