One grocery product that I love is boxed cake mixes. They are so versatile and can make anything from pancakes to brownies to cinnamon rolls. And yes, I do love homemade, but store-bought shortcuts are perfect for quick and easy desserts. So guess what is in these peppermint patty cookies?

Cakeย mix! Yup, I’m falling in love withย cakeย mix cookies for their softness, richness, and wonderful-ness. And the fact that these have a whole peppermint patty stuffed inside these chocolate cake mix cookies? Even better.

About these Peppermint Patty Cookies:

  • There are only 5 ingredients. Ok, 6 if you want sprinkles on top.
  • They have peppermint patties (my favorite candies) stuffed inside a chocolate cookie. I also like throwing peppermint patties in Oreo truffles!
  • Cake mix and cream cheese keeps them soft for days.
  • They are perfect for kids to help with and they take less than 30 minutes to make.

Just 5 Ingredients Needed

  • Cake mix. The ounces of box cake mixes keep changing, but as long as it is a standard 9×13-inch cake mix, it should work fine. Use just the dry mix. It already has the salt and baking soda you need for the recipe to work.
  • Cream cheese and butter. Full fat cream cheese and 100% butter work best.
  • Peppermint patties. Snack-size works best. They are a little larger than a quarter-size round.

How to Make Peppermint Patty Cookies

  • Mix up the dough in a large bowl. It’s just aย cakeย mix, an egg, cream cheese, and butter. The dough will be very thick so a hand mixer or stand mixer works best. That’s exactly how it is supposed to be. It will be soft, but shouldn’t be so sticky that you can’t handle it to roll balls.
  • Scoop and roll dough into 16 cookie dough balls.

  1. Take a ball of dough, flatten it and wrap around a peppermint patty. You want the peppermint patty to be completely covered or else it might not stay in your cookie.

  1. Place the cookies on a lightly greased cookie sheet, or use a silpat baking mat. Sprinkle the cookies with sprinkles if you’d like.
  2. Bake the cake mix cookies for 10-11 minutes. Allow them to cool on a baking sheet for a few minutes and then remove them to a cooling rack. They will be very soft!

Recipe Variations

Options are endless when it comes to eating these peppermint patty cookies. You could also make them for any occasion… think about it!

  • Switch up the flavor of cake mix. Try red velvet for a gorgeous look.
  • Put a different candy bar inside. Snickers bars are amazing.
  • Use sprinkles or a chocolate drizzle for any occasion.
  • Add peppermint or vanilla extract to the cookie dough for more flavor.
  • Top with crushed candy canes for a festive Christmas cookie.
  • Add chocolate frosting or melted chocolate on top!

How to Store Peppermint Patty Cookies

These peppermint patty cookies really do stay soft for days stored in a container. You can even store them in the freezer for about 6 weeks, pull them out, let them defrost, and bite into some chocolate mint goodness.

Ingredients
 

  • 1 package Duncan Hines dark chocolate fudge cake mix (15.25 ounces)
  • 1 large egg
  • 4 ounces cream cheese (softened)
  • 1/4 cup salted butter softened (almost melted)
  • 16 snack size York Peppermint Patties
  • sprinkles optional

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  • In a small bowl, mix the cake mix, egg, cream cheese and butter until it is all well combined. The mixture will be very thick. 1 package Duncan Hines dark chocolate fudge cake mix, 1 large egg, 4 ounces cream cheese, ¼ cup salted butter
  • Make 16 balls out of the chocolate batter.
  • Flatten each ball in the palm of your hand. Place a peppermint patty on each flattened ball and wrap the cookie dough around the peppermint patty so it is covered completely. Repeat with the remaining peppermint patties and dough. 16 snack size York Peppermint Patties
  • Place the cookies on a lightly greased cookie sheet. Sprinkle with colored sprinkles, if desired. Bake for 10-11 minutes.
  • Allow the cookies to cool for 4-5 minutes on the cookie sheet, then transfer them to a wire rack to cool completely. Store in an airtight container at room temperature.

I’ve made these 3 times since finding the recipe in December. Absolutely love them! They are super easy to make, although with my oven it takes 15-16 minutes to cook. Even with cake mixes having less in them now (15.25 oz instead of the 16.5 oz back in 2015) it still makes 16 yummy cookies. I can’t wait to try variations of this recipe with different flavored cake mix and filling. Thanks for sharing!
