We started a Whole30 to get ourselves back on track after the holiday indulgences. I was so ready to cut the sugar, breads and rich foods. This is our 4th time going through a Whole30, so I fully knew what to expect. Check back this weekend as I’ll be giving you a week in review recap of our eating adventures.

One of my goals for this new year Whole30 is to eat more fish. Tuna is a great way to add lean protein, healthy fat and must-have vitamins and minerals to your diet. We used Bumble Beeยฎ  tuna to make a Paleo Tuna Salad with a homemade dressing. Bumble Beeยฎ Tuna makes it super easy for you with tuna in cans or pouches.

If you’re trying out a paleo diet for a new you in this new year, this paleo tuna salad is going to be such a help for you. Whether you’re looking for a lunch to take to work or a quick dinner, this paleo recipe will come to your rescue.

How can you make this a quick lunch that will be ready for you all throughout the work week? On Sunday, hard-boil some eggs. Wondering the best way to hard-boil eggs? We make perfect eggs every time in an Instant Pot.  Cook however many you think you’ll need for the week. I purposely didn’t put measurements on the different ingredients of the salad itself. I know you are all smart and can figure out on your own how big of a salad you’d like, or how much you’ll want to prepare for the week ahead.

While the eggs are cooking, chop the lettuce and slice the red onions and tomatoes.  Open the can of olives and put them in a plastic container with a lid so that you have easy access to them. Open a can of tuna, drain it, and store it in a plastic container with a lid. Once tuna is opened, it only keeps in the fridge for about three days, so don’t open too much tuna at once.

Use a glass or plastic jar with a screw-top lid to make this simple, pretty dressing. Add the dressing ingredients to the jar, cover it, and shake to mix. Pour the dressing over the salad right before serving. It’s a simple, tangy paleo homemade dressing that quickly became one of our favorites.

Ingredients
 

  • Romaine lettuce chopped
  • Red onion sliced
  • Black olives
  • Roma tomatoes sliced
  • Hard-boiled eggs sliced
  • Bumble Bee Chunk Light Tuna drained

Dressing:

  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon snipped fresh tarragon or ¼ teaspoon dried tarragon
  • 1 teaspoon spicy brown mustard
  • 1/4 teaspoon salt
  • dash black pepper

Instructions
 

  • Layer the lettuce, onion, olives, tomatoes and hard boiled eggs on a plate. Top with tuna.
  • In a jar with a screw-top, combine the dressing ingredients. Cover and shake to mix. Drizzle desired amount over the salad.
  • Refrigerate remaining salad dressing.

Notes

*The dressing makes about ½ cup.
*In order to make this recipe Whole30 acceptable, leave out the honey from the dressing. This will slightly lower the calories.
*A note about the calories…the calories are for 1 salad (2 cups lettuce, 1 egg, ½ can tuna fish, etc…and ¼ cup dressing).

I know some people turn their nose at the thought of tuna, but good thing my momma raised me right, we grew up to love tuna! Plus, I’m digging all of the fresh flavors in this salad!

When I turned vegetarian ages ago, one of the last foods I gave up was tuna. It was such an easy meal placement.I have no doubts this salad would b delicious. Still can make it for my family!
