Another delicious potato recipe to add to your “easy side dish” arsenal. These oven baked cheesy potatoes can bake while you prepare your skillet chicken or bbq hamburgers for dinner. And be sure to try our potato dinner rolls with them!

A cheesy potato bake is my weakness. From funeral potatoes to hash brown potato casseroles, to Christmas cheesy potato casserole, I can’t get enough.

These are easy cheesy potatoes, potatoes simply diced, then roasted in a baking dish until tender, and topped with shredded cheese. The roasted potatoes good for any evening from Thanksgiving dinner to Sunday potlucks!

What potatoes are best for roasting?

For diced roasted potatoes, we like to use red potatoes. They have a waxy texture and hold their shape well during cooking. Yukon gold potatoes are our second choice.

Ingredients needed:

  • Red potatoes.
  • Shredded cheese. Since I chose an Italian flavor, I used shredded mozzarella cheese, but cheddar cheese is delicious too.
  • Salt & pepper.
  • Italian seasoning & garlic powder.

Ingredients
 

  • 4 red potatoes chopped
  • 1 tablespoon coconut oil or olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley or Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mozzarella cheese shredded

Instructions
 

  • Preheat oven to 400ยบF. Spray a baking dish or cookie sheet lightly with cooking spray.
  • Chop the potatoes in 1/2" to 3/4" chunks. Use a paper towel to dry them slightly, then place the potatoes in a bowl. 4 red potatoes
  • Sprinkle the potatoes with the melted coconut oil and seasonings. 1 tablespoon coconut oil, 1 teaspoon garlic powder, 1 teaspoon dried parsley, ½ teaspoon salt, ½ teaspoon black pepper
  • Arrange the potatoes in a single layer on the baking sheet so the potatoes can cook evenly.
  • Bake for 25 minutes, stirring one or two times during baking, until tender. If you'd like potatoes crispy, place them under the broiler for 2-4 minutes. WATCH THEM CLOSELY as they will cook quickly.
  • Sprinkle potatoes with shredded cheese and place back into the hot oven for 3-4 minutes or until the cheese is melted. 1 cup mozzarella cheese

  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat the potatoes in an air fryer to crisp them up again.

How to Make Oven Roasted Potatoes

  • Chop the potatoes. Chop the potatoes to about 1/2″ or 3/4″ cubes. Make sure they are all similar in size so they cook evenly. You can chop the potato bites as big or as small as you’d like. We tend to do a smaller cut so that the potatoes don’t need to cook as long.
  • Season the potatoes. Toss the potatoes in oil and then season.

  1. Bake. Place the potato cubes on a baking sheet and bake at 400ยบ Fahrenheit for about 25 minutes. Stir the potatoes once or twice while baking so they brown on all sides.

  1. Make them cheesy. Make sure the potatoes are fully cooked and browned to your liking before adding the cheese. Top the potatoeswith freshly shredded mozzarella and pop back into the hot oven for about 3-4 minutes to allow the cheese to melt. This recipe is delicious with or without the cheese!

What to Serve with Potatoes

These potatoes go so well with baked chicken legs, garlic parmesan chicken, fried pork chops or cola burgers.

This was sooo good! I was looking for a cheesy potato recipe, but they were so unhealthy! FINALLY, I found this one! I thought I had red potatoes, but didn’t, so I used yellow potatoes. Didn’t measure anything, used about 10 small potatoes and threw them in a bowl with the seasoning to mix. Mine took more like 30 mins to start crisping. They had a very good, distinctive taste, I think it was the garlic powder. Ate some dipped in ranch. Delicious, will definitely make these again and again. Thank u!
