The ultimate in comfort food, this Impossible Taco Pie is layered with ground beef, Rotel, cheddar cheese and a Bisquick topping. It’s an easy family dinner recipe.

Earlier this year we made the traditional Bisquick Impossible Cheeseburger Pie. It was a meal everyone enjoyed, so I immediately started thinking up new versions of that easy dinner.

This Impossible Taco Pie uses the same recipe, but switches out a few ingredients to give it a Mexican flair. With taco seasoning, Rotel and cheddar cheese, this is going to compete with our easy tamale pie and become your new favorite Taco Tuesday recipe.

What is Bisquick impossible pie?

Bisquick impossible pie is a classic recipe that was first shared on the back of a box of that famous biscuit mix. The traditional recipe is a mixture of ground beef, cheese, eggs and bisquick mix to hold it all together.

Don’t get this easy taco pie confused with Impossible Pies. Those sweet desserts are pie recipes that makes their own crust when baked.

How to Make Impossible Taco Pie

  • Prepare. Preheat the oven to 400ยบ Fahrenheit. Spray a 9-inch pie plate (or cake pan) with cooking spray.
  • Brown. Using a skillet over medium heat, cook ground beef until the beef is no longer pink. Drain off any excess grease. Add in the packet of taco seasoning mix (try our homemade taco seasoning) and drained Rotel (tomatoes with green chilies). Stir beef well and heat through.

  1. Layer. Spoon the beef mixture in the bottom of the prepared pie plate. Sprinkle the shredded cheese over the top.

  1. Mix. In a small bowl, whisk together the Bisquick mix, milk and eggs. Pour evenly over the beef and cheese.

  1. Bake. Bake for 25-30 minutes or until the middle of the pie is set and the top is golden brown. A knife inserted in the center should come out clean.

Need gluten free? Use a gluten free bisquick mix.

Impossible Taco Pie Toppings

Try topping this taco pie recipe with your favorite taco toppings such as onion, black olives, green onions, lettuce, pepper and taco sauce. Garnish with fresh avocado slices and cilantro.

What to Serve with Bisquick Taco Pie

Let’s make it a meal! This taco casserole is excellent served with fresh pico de gallo (or even salsa verde), sour cream or guacamole.

Recipe Variations

  • Make this a low carb taco pie by leaving out the Bisquick and lowering the milk to ½ cup. It may not stay together in slices, but it will be a delicious keto taco pie.
  • Use ground chicken or ground turkey in place of the ground beef.
  • Add ½ crushed Doritos to the top of the pie for a twist that the kids will love.
  • Don’t have Rotel? Use about 1 cup salsa instead.

  • Preheat the oven to 400ยบ Fahrenheit. Spray a 9" round deep dish pie plate (or cake pan) with cooking spray.
  • Using a skillet over medium heat, brown the ground beef until the beef is no longer pink. Drain off any fat. Add in the taco seasoning and drained Rotel. Mix well and heat through. 1 ½ pounds lean ground beef, 1 envelope taco seasoning, 10 ounces Rotel tomatoes & green chiles
  • Spread the beef mixture in the bottom of the prepared pie plate. Sprinkle the shredded cheese over the top. 1 cup shredded cheddar cheese
  • In a small bowl, whisk together the Bisquick mix, milk and eggs. Stir well to make sure it is completely mixed. Pour evenly over the beef and cheese. ½ cup Bisquick mix, 1 cup milk, 3 large eggs
  • Bake for 25-30 minutes or until the middle of the pie is set and the top is golden brown. A knife inserted in the center should come out clean. Serve immediately.

If you’re going to make this, don’t skip the toppings – lettuce, tomatoes, cheese, avocado, cilantro, sour cream, salsa, guacamole… whatever you like on tacos. Without toppings, this looks unappetizing and tastes like meatloaf and taco seasoning.

This is an oldie but goodie. I use Carbquick instead of bisquick as my husband is a diabetic. I donโ€™t have the actual numbers, but Iโ€™ve used it for years not quite as good as Bisquick but works for his blood sugar. You can use it for anything, I used to have to order from Amazon but Walmart carries it now. I just substitute same amount. I was scrolling for something to use with the ground chuck I had defrosted. Thank you for reminding me of this
