Red Velvet Pudding Ingredients

This recipe is split into two parts. Fir you’ll make the basic homemade pudding mix. Then you’ll use that mix to make the pudding.

Homemade Pudding Mix Ingredients:

This basic pudding mix is made up of cornstarch, flour, sugar and salt. Simply whisk those 4 ingredients together. You won’t need all of this powdered mix for this recipe, but store it in an airtight container at room temperature for several months to make more in the future. Don’t want to much on hand? Pudding Ingredients:

ingredients for homemade pudding on a table
  • Whole milk. Use lower fat if you’d like but the whole milk makes the creamiest pudding.
  • Unsweetened cocoa powder.
  • Sugar.
  • Eggs.
  • Butter. The richness of the butter is necessary for the perfect balance of sweetness.
  • LorAnn red velvet bakery emulsion. This isn’t just food coloring, it’s the red velvet flavor and is what makes this recipe special. If you’re into red velvet desserts, this is an ingredient you need to keep on hand. It has just a hint of cocoa.
  • Vanilla extract. I used our homemade bourbon vanilla and it was amazing in this recipe.

pro tip

The red velvet pudding as it sets may form a “film” on the top as it dries. Pressing plastic wrap over the top of the pudding prevents this film from forming.

Instructions

  • For the Basic Pudding Mix, combine the corn starch, flour, sugar and salt. Mix well and store in an air tight container. Set aside.
  • Pour 2 ยฝ cups of milk in a medium saucepan. Turn the heat on the stove to low. Allow the milk to get steaming and hot, but not boiling.
  • While the milk is heating, take another bowl and mix together the other half cup of milk with the pudding mix, cocoa powder, sugar and eggs.
  • Once the milk is hot, add the cocoa mixture to the hot milk and stir. Then add in the butter and red velvet flavoring. Turn the heat up just a bit to medium or medium-low. Stir constantly because the mixture could easily burn.
  • Cook and stir until the pudding mixture starts to thicken, about 8 minutes, depending on the thickness you'd like. When the pudding is at a thick consistency, turn off the heat and remove the pan from the burner. Mix in the vanilla extract. It will thicken a bit more as it sits. Cool the pudding completely and store in the refrigerator.
