Do you have birthday dinners at your house? Birthday celebrations always revolve around food at our house. Wait. Who am I kidding. Everything revolves around food at our house. We are really working to change that ย mindset, which is really hard to do when you’re a food blogger.

We’re trying to focus more on theย “healthy” part of our “Healthy with a little bit of happy”. Celebrations shouldn’t always involve food, but when the food you want to celebrate actually fits into a paleo diet, this is cause for a huge celebration.

With that intro you’d think that we were celebrating a birthday this week in our house. Nope. We’re not. But slow cooker roast beef always remind me of my birthday because it’s when I was younger it was my choice for a birthday meal every year. Tender roast beef that falls apart when you pick it up with a fork, a side of creamy mashed potatoes and green beans. That is a comfort meal.

How to Make Garlic Bacon Pot Roast

Although I’m happy with just throwing a roast into the slow cooker and eating it plain, I decided to dress up this pot roast by adding bacon and garlic. I wanted to be sure to keep it ย paleo-friendly so I kept it dressed up simply with bacon, garlic, beef stock and the roast, of course.

  • Cook the bacon first. The oven method is my favorite way to cook bacon. No spatters, no burns on your hands and arms, and perfectly crisp bacon every time.
  • Place the roast in the slow cooker. I used shoulder roast because that is what I had in the freezer. I’ve never been good at picking out which type of roast is best for a certain recipe. I was happy with the way the shoulder roast turned out, though, so you can use this or just use your favorite cut of beef.
  • Crumble the bacon on top of the beef. Add the garlic. Then pour the beef stock all over the top. Let this simmer in your slow cooker for 6 hours on high, or 9-10 hours on low. The beef should shred apart when you pick it up with a fork and the exact timing will depend on how big the roast is and what cut of meat it is. Makes me hungry just thinking about it.

What to serve company for dinner?

We have company often at our house. When we have guests, I want to fix something delicious, but I also want to not completely blow our healthy “clean” eating. This Garlic Bacon Pot Roast is the perfect solution. Serve it with a side of sweet potatoes and green beans.

Your guests will never know they’re eating a paleo dinner. And you’ll be happy you stuck to your diet!

Ingredients
 

  • 3 pounds beef shoulder roast or roast of your choice
  • 6 slices bacon cooked and crumbled
  • 1 teaspoon minced garlic
  • 3/4 cup beef stock

Instructions
 

  • Trim the fat off of the beef roast. Place the roast in the slow cooker.
  • Sprinkle the crumbled bacon over top the roast.
  • Add the minced garlic to the top of the roast.
  • Pour the beef stock over top the roast.
  • Cook on high for 6 hours or on low for 9-10 hours, or until beef is tender.

Total comfort food – and I can see why you picked roast for your birthday meal! ๐Ÿ™‚ Since my birthday is the 4th of July, I always had hamburgers and hot dogs ….. I’m 30-something and still do this for my birthday meal! That’s a lot of hot dogs and hamburgers!! lol.

This is my ideal recipe – 4 ingredients and let the slow cooking does its magic. And look at how beautiful it is. Yum! My birthday meal has to be cake…anything that involves chocolate, for sure, like chocolate pasta.
