Ingredients Needed
After the brownies are baked there are only 4 ingredients needed for the base of this recipe:
- Baked brownies: This is a great way to use up any leftover brownies!
- Cream cheese: Only 4 ounces and it will mix easier if it is softened.
- White chocolate: For dipping.
- Sprinkles. This is our secret for making imperfect hand dipped truffles extra pretty.

What is the best chocolate for melting?
There are many options out there for melting chocolate to dip truffles in, but we have a few requirements. It needs to melt quickly, smoothly and taste delicious. The product that matches all 3 of these is Ghirardelli melting wafers. You can buy these in the grocery store right by the chocolate chips. Look towards the top of the shelf and you’ll see 8 ounce bags of white, dark or milk chocolate wafers.
They melt so quickly in the microwave. The chocolate ends up smooth and not super thick which makes it easy to dip.
Budget Tip: During the holidays, Aldi sells melting wafers. They are about half the price and work just as good as Ghirardelli!
How to Make Easy Brownie Truffles
- Mix. Take the brownies and cut all around the edges (removing any hard edges) and keeping only the soft brownies. Place the brownies into a food processor (or use a bowl and a hand mixer.) Pulse to crumble the brownies. Add the cream cheese to the food processor and pulse until the brownies and cream cheese are fully incorporated.
- Scoop. Using a tablespoon or a small cookie scoop, scoop the brownie batter onto a cookie sheet that has been lined with parchment paper. Place into the freezer for about 20-30 minutes.
- Roll. Remove the cookie sheet and start rolling the brownie dough into 1 inch balls. (Doing this step without chilling the brownie mixture first won’t be easy. Make sure to chill the dough!) Place the round brownie dough balls back into the freezer for another 10 minutes.
- Melt. Start melting the white chocolate wafers in a microwave safe bowl. I start with 30 seconds and stir. Then I do 15 second increments as needed until the chocolate is melted, stirring between each interval.
- Dip. Use a fork to dip the brownie truffles into the white chocolate, tapping to let any excess chocolate drip off. Place back on the lined baking sheet. If adding sprinkles, do so now before the chocolate hardens. Continue to dip and sprinkle until all of the truffles are complete.
Recipe Variations:
- Don’t like cream cheese? Use the same amount of chocolate frosting to mix with the brownies.
- Add chocolate chips, andes mints, chopped candy bars or mini M&Ms to the brownie truffles.
- Dip in dark chocolate or drizzle chocolate over the top.
- Sprinkle the chocolate brownie truffles with nuts or other candies.
How to Store Brownie Truffles
The insides of the truffles will be very soft. Store in the fridge or freeze the truffles when you are not serving them. This will keep them fresh. Store them in an airtight container.

Ingredients
- 1 9×13 pan of baked brownies (We used Betty Crocker Fudge Brownies family size)
For the truffles:
- 4 ounces cream cheese (softened)
- 16 ounces Ghirardelli White Chocolate Melting Wafers
- chocolate sprinkles
Instructions
- Follow the directions on the boxed brownie mix and bake as instructed. Once the brownies are fully baked, allow them to cool completely. Note: We used Betty Crocker Fudge Brownies in family size.

- Store truffles in the freezer until they are ready to serve. Allow them to sit at room temperature for 5 minutes to soften before serving.
Notes
- If you are using leftover brownies and don’t have a whole pan, use less cream cheese.
