A cheesy non traditional stuffing. This Cheesy Herb Stuffing recipe has dill, chives and fresh parsley along with a buttery, savory flavor.

There is simply nothing like the aroma of herb stuffing baking in the oven. It’s my favorite part of Thanksgiving. But really…why do we only think of stuffing at Thanksgiving time, as an afterthought to the turkey? In my mind, stuffing should be center stage, and this cheesy herb stuffing I’m sharing today is definitely a show-stopper.

Yes, this non-traditional herb stuffing would be good with turkey, but I think it would also be an excellent side dish with pork steak or even baked ham. Because ham and cheddar always go together. It’s like a deconstructed ham sandwich.

Cheesy Herb Stuffing Ingredients

Here are just a few key ingredients:

  • Bread Cubes: To keep this recipe quick and easy, use store bought bread crumbs. The bag I used was a 12 ounce bag, perfect to make our family of 5 a delicious side dish. You can also use a stale loaf of bread (12 oz) and cut it into small cubes.
  • Cheddar Cheese: Bread and cheese…cheesy bread. They just go together. So why not have a herb stuffing with cheddar cheese?!
  • Herbs and Seasonings: To switch things up from traditional stuffing flavors, I decided to use a mix of dill, chives, and fresh parsley since these herbs go so well with cheddar cheese. I used dried dill and chives, but fresh parsley. Feel free to use fresh dill and chives if you’d like. You can never go wrong with fresh herbs! If you use fresh herbs, use about a tablespoon of both fresh dill and chives to achieve the same flavor.
  • Eggs: I always add 2 eggs to my stuffing mix. It helps to bind the ingredients together a little, which I like. If you like your stuffing drier, you could leave these out. It’s really a matter of taste and texture.

How to Make Cheesy Herb Stuffing

  • Preheat the oven to 350ยบF. Spray a 2-quart baking dish with cooking spray.
  • In a large skillet over medium heat, melt the butter and sautรฉ the onion for 10-12 minutes, or until the onion is tender. 
  • Place the bread cubes in a large mixing bowl. Pour the butter and onion mixture over the bread cubes and toss to mix. Add the seasonings, chicken stock, eggs and all but ⅓ cup cheddar cheese (set this aside for topping). 
  • Put the stuffing in the prepared pan. Sprinkle the remaining cheddar cheese on top of the stuffing.
  • Bake for 30 minutes or until golden brown.
  • Sprinkle the top with fresh parsley before serving.

Other Herb Ideas

  • Want more traditional stuffing flavors? Try adding rosemary, sage or fresh thyme.
  • Add minced garlic cloves to this cheesy stuffing. It would mimic the flavors of cheesy garlic bread.
  • Want a sausage stuffing? Brown ½ pound of of sausage and add it to the bread mixture before baking.
  • Add diced vegetables like celery or carrots or mushrooms.

Make Ahead Instructions

Assemble this stuffing recipe a day in advance, cover with plastic wrap or foil and store in the refrigerator.

One hour before baking, remove from the fridge and bake according to the recipe.

Can you freeze cheesy herb stuffing?

Yes, freeze stuffing in an airtight container for up to 6 weeks. Thaw and reheat in the microwave or air fryer.

Ingredients
 

  • 1/2 cup diced white onion
  • 1/2 cup salted butter
  • 12 ounces bread stuffing cubes
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried dill
  • 1 teaspoon dried chives
  • 1 cup chicken stock
  • 2 large eggs whisked
  • 8 ounces shredded cheddar cheese divided
  • 2 tablespoons freshly snipped parsley

Instructions
 

  • Preheat the oven to 350ยบF. Spray a 2-quart casserole dish with cooking spray.
  • In a frying pan, sautรฉ the onion in the butter for 10-12 minutes, or until the onion is tender. ½ cup diced white onion, ½ cup salted butter
  • Place the bread cubes in a large bowl. Pour the butter and onion mixture over the bread cubes and mix. Add the seasonings, chicken stock, eggs and all but ⅓ cup cheddar cheese (set this aside for topping). 12 ounces bread stuffing cubes, 1 teaspoon salt, ½ teaspoon ground black pepper, 1 teaspoon dried dill, 1 teaspoon dried chives, 1 cup chicken stock, 2 large eggs, 8 ounces shredded cheddar cheese
  • Put the stuffing in the prepared pan.ย Sprinkle the remaining cheddar cheese on top of the stuffing.
  • Bake for 30 minutes or until golden brown.
  • Sprinkle the top with fresh parsley before serving. 2 tablespoons freshly snipped parsley

YES. I love potato bread and love sharp cheddar cheese even more. It’s only 530 AM here, but I’m already starving for this stuffing! I get so bored of traditional stuffing, it’s nice to change it up sometimes.
