We try to make a big deal about birthdays around here. It’s harder as the kids have gotten older and aren’t always around for a birthday party on their big day. But even still, what’s not to celebrate about the gift of another year?

Today we’re sharing Birthday Cookies with sprinkles and rainbow chips. They make a great cookie for gift baskets and hold up well to a surprise birthday delivery on a front doorstep, too! The rainbow sprinkles and chips of these happy birthday cookies will bring a big smile. They are a great alternative to birthday cake!

Ingredients Needed

  • This birthday cookie recipe has a combination of both granulated sugar and brown sugar. The brown sugar helps keep them soft and chewy.
  • Cornstarch thickens the cookies, making chilling the dough completely unnecessary. That means you can be enjoying the cookies in less than 30 minutes.
  • I bought rainbow baking chips on Amazon, but you may be able to find them in your local craft store such as Michaels.

How to Make Birthday Cookies

  • Prepare. Preheat oven to 375ºF. Line baking sheet with parchment paper.
  • Mix dry ingredients. In a medium size mixing bowl, combine flour, baking powder, salt, and cornstarch. Set aside. 
  • Mix wet ingredients. Using a hand mixer or stand mixer, cream together butter, brown sugar and granulated sugar until smooth. Add vanilla, the egg and the additional egg yoke and mix until well combined.

  1. Combine the two. Gradually add in dry ingredients a little at a time, and mix on a low speed until combined, then increase to medium speed until all ingredients are blended.

  1. Add sprinkles! Using a wooden spoon or a rubber spatula stir in rainbow chips and sprinkles.

  1. Scoop and bake. Using a medium size cookie scoop, drop dough onto lined baking sheet, about 2 inches apart. Bake for 8-10 min or until the edges of the cookies are lightly browned. Remove from oven and allow to cool for 5 minutes on baking sheet before transferring to a cooling rack to cool completely.

How to Package Birthday Cookies

Birthday cookie gifts can make the perfect birthday gift for the person who has everything!

Seal cookies in airtight containers or wrap them tightly in plastic wrap before placing them in decorative packaging. This ensures they stay fresh and soft, especially if they’re being gifted a day or two later.

Here’s some ideas for packing the cookies

  • Gift Boxes or Tins: Sturdy boxes or tins with lids are perfect for gifting. Line them with parchment paper or colorful tissue paper for added protection and a pop of color.
  • Cellophane Bags: Clear bags let the cookies shine while keeping them fresh. Tie them with a ribbon or twist tie for a polished look.
  • Party-Theme Bags: Look for bags with patterns or designs that match the birthday theme, such as balloons, confetti, or favorite characters.

Include a small label or tag with the cookie name and a note. If your cookies contain allergens like nuts, be sure to add a note for safety.

  • Add vanilla, the egg and the additional egg yoke and mix until well combined. ½ teaspoon vanilla extract, 1 large egg, 1 large egg yolk
  • Gradually add in dry ingredients a little at a time, and mix on a low speed until combined, then increase to medium speed until all ingredients are blended.
  • Using a wooden spoon or a rubber spatula stir in rainbow chips and sprinkles. 1 cup rainbow chips, ½ cup sprinkles
  • Using a medium size cookie scoop, drop cookie dough balls onto lined cookie sheet, about 2 inches apart. Bake for 8-10 min or until the edges of the cookies are lightly browned.
  • Remove from oven and allow to cool for 5 min on baking sheet before transferring to a cooling rack to cool completely.
