I love drinking bubbles; the fizz that tickles my nose right before I take my very first sip. Bubbles of flavor. Every flavor. I love bubbles.
I made you some bubbles today. Iโve been toying with syrups. I have two children โ A fourteen year old and a six-year-old. And when it comes to what they eat, I am forced to become Food Police Mama.
I donโt allow commercial brand sodas in the house. Iโm one of those mamas โ The kind of mama who always worries about dyes, chemicals, and additives in food. Iโm no zealot. I will not wax poetic till your eyes glaze over. I will not secretly judge your shopping cart filled with cans of the commercial stuff. Iโm a live and let live sorta chick. But as a mom of littles, I kinda worry about your kids too. Iโm not judgingโฆ Just worrying. In silence. So I make my bubbles in the hopes a mama will make them and put down the commercial brand.

These bubbles start with a ginger simple syrup. Believe it or not, it took me months to perfect this situation. I used to chop ginger and with equal parts water and sugar I had a decent syrup going. But it wasnโtโฆ Enoughโฆ Ginger is spicy, bracing, and sweet. I wanted to capture the essence of ginger in a super concentrated syrup. Then one day I pureed ginger in blender and the rest was history.
This ginger lime soda is a staple in my house. The star is of course, the ginger syrup โ And when paired with muddled limes, it becomes a perfect synergy of flavor.
Making the ginger syrup will be slightly time-consuming, as there is some straining involved; however, this recipe makes at least a weekโs worth of syrup to be savored whenever the mood strikes. Once the syrup cools you can go all in. Add a few tablespoons of ginger syrup to a glass, muddle a few juicy lime wedges to the mix, ice it up, and top with effervescent bubbles.

Ginger Lime Soda

Ingredients
For the Ginger Syrup:
- 2 1/2 pounds Fresh ginger
- 4 cups Water
- 4 1/2 cups Granulated sugar
For the Ginger Lime Soda:
- 2-3 tablespoons Ginger syrup*
- 1 lime quartered
- Seltzer
- Ice
- Limes for garnish
Instructions
Make the ginger syrup:
- Peel and chop ginger. After peeling and chopping you'll be left with roughly 1 ½ pounds of peeled ginger. If it's more or less, it's not a big deal
- Place the chopped ginger and water in a blender or a food processor. Blend or process until mostly smooth. Transfer the blended ginger into a large pot and add the sugar. Stir to combine.
- Bring to a boil over high heat, then reduce the heat to low and simmer for about 15-20 minutes until slightly reduced and syrupy.
- Remove from heat and allow it to come to room temperature. Strain the mixture, pressing down on the solids to extract as much liquid as possible. Discard the solids and transfer the syrup to a large glass jar or bottle with a tightly fitting lid. Makes about 5 ½ cups of ginger syrup.
Make the ginger lime soda:
- Spoon 2-3 tablespoons of ginger syrup to a tall glass. Add the lime wedges and muddle limes with a muddler or back of a wooden spoon until limes have released their juice. Add ice and top with seltzer. Stir briefly to combine and enjoy.

Nice! If you can’t find fresh ginger, you can also use organic ginger root powder which taste good as well. You can use ginger in a variety of forms including dried, fresh, crystallized and powered. I find that fresh ginger is best.
