This easy recipe for sheet pan cookies is based off both our Toll House cookie recipe and easy chocolate chip cookies. It has similar ratios to the Toll House dough, but uses melted butter and no electric mixer, just like the easy chocolate chip cookies. This sheet pan cookie recipe takes 30 minutes from start to finish, and works well with all-purpose gluten-free flour.

About these Sheet Pan Cookies:

I’m a fan of bar cookies and have been every since I was a teenager craving cookie dough but not wanting to scoop cookies for hours. Pressing dough into a cake pan or sheet pan? So easy and quick.

Our favorite cookie bars are our oatmeal chocolate chip bars, butterscotch chocolate chip cookie bars, sugar cookie bars and congo bars, but those all bake in a 9×13″ baking. I developed this recipe to fit in a true half sheet pan making sheet pan cookie bars.

My method is easy: instead of room temperature butter, use melted butter so that you can easily mix with a bowl and rubber spatula rather than a hand mixer. The result of using melted butter? Chewy sheet pan chocolate chip cookies with a sweet and salty flavor and texture that you’ll love. Serve with a scoop of ice cream for the ultimate treat!

  • Preheat the oven to 350ºF. Line a half sheet pan (13×18”) with parchment paper and spray with cooking spray.
  • Melt the butter in a large mixing bowl. Add the sugars and vanilla. Stir to mix well. Add in the eggs and mix again. 1 ½ cups salted butter, 1 cup granulated sugar, 1 cup packed brown sugar, 2 teaspoons vanilla extract, 3 large eggs
  • Add the flour, baking soda and salt. Mix again just until barely combined. 3 ⅓ cups all-purpose flour, 2 teaspoons baking soda, 1 teaspoon salt
  • Mix in the chocolate chips and continue to mix until the cookie dough is evenly mixed. 3 cups semi-sweet chocolate chips
  • Carefully spread the dough into the prepared pan, pressing it to be in an even layer. Sprinkle extra chocolate chips on top if desired.
  • Bake for 18-20 minutes, until golden brown on top and to the desired doneness you’d like.

Notes

  • Switch up the chips as you’d like. Milk chocolate chips or white chocolate chips will make the bars taste sweeter than dark chocolate or semi-sweet.

Ingredient Notes

  • Butter. Salted butter or unsalted butter work in this recipe.
  • Sugar. Two types of sugar gives rich sweetness but also that chewy texture you’ll love. Try vanilla sugar in place of the granulated sugar for more vanilla flavor.
  • Vanilla extract. Pure vanilla extract is best. Make vanilla at home!
  • Baking soda. You’ll only need baking soda in this recipe for leavening. No baking powder.

Storage

Store in an airtight container at room temperature for up to 3 days. The chocolate chip sheet pan cookies freeze well, too! Thaw at room temperature without opening the container. This will keep the cookie bars fresh.
