Soft Italian bread with a garlic Parmesan cream cheese spread. These mini Italian tomato sandwiches with fresh parsley make a great appetizer or lunch.

I don’t know about you, but mini versions of food are one of my favorite things. Some call them “finger foods”. I prefer to call these “bite-size”, “mini” or simply…appetizers.

A short time ago we shared with you our garlic cheese ball that is a creamy mixture ofย the savory Italian flavors of Parmesan, garlic and Italian seasonings.

These mini sandwiches use that cheesy mixture as a spread on crusty Italian bread. Dice some fresh garden tomatoes and snip some fresh curly parsley on top and you have yourself a simple, pretty party appetizer. And they go well as a starter with our Italian veggie soup.

How to Make Italian Tomato Sandwiches

  • Mix the garlic cheese base. Use a hand mixer to get it completely smooth.
  • Cut a crusty loaf of bread. Get a French baguette or your other favorite bread and cut into 1/2″ slices.
  • Assemble the sandwiches. Spread about a tablespoon or two of cheese mixture on each slice of bread. Then top with the diced tomatoes and snipped parsley.

Recipe Variations

  • Snip fresh basil leaves or oregano on top of the Itailan tomato sandwiches along with the fresh parsley.
  • Do you love pesto? Spoon a tiny bit of basil pesto on top of the cheese mixture, then top with tomatoes.
  • Love a classic caprese salad or caprese sandwich? Make a balsamic glaze with ½ cup balsamic vinegar and two tablespoons brown sugar. Let it simmer on the stovetop until it is reduced in half. Allow it to cool and drizzle the glaze over the sandwiches.
  • Top the sandwiches with bruschetta rather than simply tomatoes.

Ingredients
 

  • 8 ounces cream cheese softened
  • 1 teaspoon minced garlic
  • 1/4 cup sour cream
  • 1/4 cup Parmesan cheese
  • 1/4 cup Italian shredded cheese or mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1 loaf French baguette sliced about ½ inch thick)
  • 3 Roma tomatoes diced
  • Curly parsley finely chopped
  • salt and black pepper to taste

Instructions
 

  • In a small bowl, mix the cream cheese until it is smooth. Add the garlic, sour cream, cheeses and Italian seasoning. Mix until well combined. 8 ounces cream cheese, 1 teaspoon minced garlic, ¼ cup sour cream, ¼ cup Parmesan cheese, ¼ cup Italian shredded cheese, 1 teaspoon Italian seasoning
  • Spread a layer of garlic cheese spread on each slice of bread. Top with the diced tomatoes and the chopped parsley. 1 loaf French baguette, 3 Roma tomatoes, Curly parsley
  • Cover and refrigerate until serving. Season with salt and black pepper as desired.

Notes

The amount of appetizers you get from this recipe depends on the amount of bread you have and how thick you cut the bread. I got about 32 mini sandwiches from the ingredients listed here.
