A light and refreshing summer that even your kids will love! Fresh peach salad is loaded with corn, avocado and homemade poppy seed dressing.

I love to create a new peach recipe after The Peach Truck rolls into town. Last year it was our peach Jello pie, and this year it is on the lighter side. Fresh Peach Salad.

Although many different ingredients go well with peaches, I chose avocado, red onion, feta and corn. It is a mild salad that really lets the flavor of the peaches shine. Enjoy this for dinner…then finish it off with a slice of peach bread. ๐Ÿ˜‹

About this Fresh Peach Salad:

  • Flavor: This summer salad recipe is a delicious combination of savory and sweet. The peaches give a pop of sweet, but the corn, onion and avocado add warmth. Once you drizzle the dressing on you’ll add a touch of tang.
  • Texture: This salad is loaded with texture, but there’s nothing extra crunchy in it. The peaches and avocado both have similar textures

Peach Salad Ingredients

Here are the key ingredients for this salad. And suggestions for alternative ingredients where they fit. Pile these all in a large salad bowl.

  • Spring lettuce mix. I love spring lettuce mix because the lettuce is tender and colorful. Use romaine, baby spinach, baby arugula or even iceberg lettuce if you’d like.
  • Peaches. You’ll want 2 ripe peaches (white peaches or yellow peaches) or even 3 depending on how much you are making. I don’t peel the peaches, but you do need to take the pit out and slice them thinly or dice them.
  • Avocado. Avocado adds such a creamy texture to the salad. Slice the avocado thinly.
  • Corn. The best way to add the corn? Grill 2 ears of corn on the cob over medium heat until the corn is tender. Then cut the corn off the cob. (And if you have the grill out, consider making grilled peaches for the salad. Delish!)
  • Red onion.
  • Feta. I can’t get enough of feta cheese and it pairs so well with this salad. Goat cheese, gorgonzola or blue cheese is another option if you like it.

Homemade Poppy Seed Dressing

Our homemade poppy seed dressing will melt in your mouth. It’s lightly tangy and slightly sweet. And it’s easy to mix up either by shaking in a mason jar or whisking in a medium bowl.

If you want the dressing thinner, add a touch more milk. If you want it thicker, add a little less milk.

Pro tip

This dressing will weaken and turn runny as it sits. If you won’t use it all in the same day, make ½ a recipe.

Recipe Variations

  • Add roasted chicken to make it a complete meal.
  • Homemade croutons are always a good idea.
  • Add blueberries for a pop of color.
  • Candied pecans or sugared walnuts add a sweet crunch.
  • Pine nuts, toasted almonds or sunflower seeds add a quick crunch.
  • Top with burrata. It’s a popular ingredient right now and the creamy mozzarella is so good with peaches.

Make it a meal.

This salad is delicious on its own, but if you want to use it as a side dish for a meal, try serving with one of these main dishes, breads and drink.

Can I make fresh peach salad ahead?

This salad is not the best made ahead. The peaches and avocado can brown if cut too early. Prep the onion and corn and store in baggies. But I recommend making this salad right before serving.

Ingredients
 

For the salad:

  • 5 cups spring lettuce mix
  • 2 peaches thinly sliced
  • avocado thinly sliced
  • ยฝ red onion thinly sliced
  • 2 corn on the cob* (cooked and cut off the cob)
  • 1/2 cup feta cheese

For the dressing:

  • 1 cup mayonnaise
  • 1/3 cup honey
  • 1/3 cup whole milk**
  • 1/4 cup apple cider vinegar
  • 1-2 tablespoons sugar*** optional, to taste
  • 1 tablespoon minced shallot
  • 1 tablespoon poppy seeds
  • 1 teaspoon minced garlic
  • ยฝ teaspoon ground mustard
  • ยฝ teaspoon salt

Instructions
 

  • Place the spring lettuce mix in a large bowl or platter.
  • Top with the sliced peaches and avocado.
  • Then sprinkle the top with the corn, sliced onion and feta cheese.
  • In a small bowl or a mason jar, mix all of the dressing ingredients. Whisk or shake to mix.
  • Pour dressing over the entire salad, or individual servings. Then serve immediately.
  • This dressing gets runny as it sits, so make it close to the time you want to serve it. If you need less, then make ½ recipe.
  • Store any leftovers in the fridge. This salad isn't great for leftovers, but I have eaten it later the same day.
