Easy Oven Baked Fries

I ask the kids every Sunday, “Any requests for dinner this week?” Every time, without fail, I hear, “Potatoes!”. Although our roasted potatoes, baked potatoes and air fryer potatoes are my go-to’s, I’m always looking for quick ideas and these easy oven baked fries are one of the best.
What You Need to Make French Fries
- Potatoes: Which type of potato is best for french fries? The Russet Potato. They are a high starch potato and have the least amount of moisture. Feel free to experiment with the different types of potatoes.
- Salt. Regular table salt is fine.
- Oil. We generally use canola oil, but if you are actually frying french fries, use peanut oil. It’s the best because of its high smoke point.
- Garlic salt, oregano and blackened seasoning. If you donโt have blackened seasoning available, you can also use Cajun seasoning.
For cooking the french fries you don’t need any special tools. Just a sheet pan at least 9×13 size will do.
How to Cut French Fries
If you want perfectly cut fries, here’s how to do it. Cut off the top and bottom of the potatoes, as well as the sides. You’ll end up making rectangle potato that you can cut in very even pieces. This is good so that the fries bake evenly.
Please know that the larger you cut your potatoes, the longer they will take to bake.
If you have room for an extra kitchen tool, get a french fry cutter. One press and boom. Evenly cut fries!
Do I need to soak the potatoes in salt water for french fries?
The salt water soak is essential to not overbrowning or even burning your fries while using the broil method. Soaking the potatoes in an ice bath helps remove moisture and starch from the potatoes resulting in a crispier and tastier fry. When I simply soaked the fries in normal cold water, they burned within minutes of cooking. The fries that had been soaked in salt water were much less likely to burn.
How long do I soak my fries for?
I soaked my fries for 10 minutes and saw great results. Some people swear by soaking for more than 30 minutes and as long as overnight. When using the broil method (as opposed to frying your fries), I didnโt notice a difference in how long I soaked my fries. I tried a batch with a 10-minute soak and another batch with an overnight soak, and there was no difference in crispiness.
These fries are meant to be a quick snack with great flavor, and donโt have the same crisp as the typical fry that you would eat at a restaurant.
Broil Method for French Fries
Although there are many ways to make french fries, the broiler method is one of the quickest. They won’t be the double fried extra crispy fries you get from the fast food restaurant you love, but the flavor and easy will win you over quickly.
- Heat the oil. Pour vegetable oil onto a sheet pan or 9×13 inch dish. Place pan in oven and turn on broiler on low. Broil oil for 2-3 minutes or until oil has heated.
- Season the fries. Sprinkle potatoes with garlic salt, oregano, and blackened seasoning
- Broil, Turn, Broil. Take pan out of oven and carefully arrange potatoes on top of oil in a single layer. Place fries in oven on middle rack and cook for 5 minutes on broil or until golden brown.
- Turn fries over and cook for an additional 3-5 minutes or until golden brown and fork tender.
Do you have extra time and want extra crispy fries? Turn on oven to 350 degrees and cook fries for 20 minutes or until they have reached your desired crispiness.
How do I store my oven baked fries?
Your easy oven baked fries will taste best fresh, right out of the oven. They do not store well. If you would like to eat the fries on the next day, you are free to heat the fries in the oven at 350 degrees for about 10 minutes or until heated through.
Store leftover fries in the refrigerator. Do not freeze.

Ingredients
- 3 large russet potatoes cleaned
- 1 tablespoon salt
- 2 cups ice cold water
- 1/3 cup vegetable or canola oil
- 1 teaspoon garlic salt
- 1 teaspoon oregano
- 1 teaspoon blackened seasoning
Instructions
- Cut 3 potatoes into ยผ- ยฝโ matchsticks and rinse under water to remove some of the starch. I kept the peel on, but you can choose to peel your potatoes.
- Combine salt and ice-cold water into a bowl.
- Place chopped potatoes into bowl and soak for 5-10 minutes.
- Pat potatoes dry and place in a dish and work in batches by laying potatoes in a single layer. Microwave covered for 3-4 minutes or until almost fork tender.
- Pour vegetable oil onto a sheet pan or 9×13 inch dish.
- Place pan in oven and turn on broiler on low. Broil oil on low for 2-3 minutes or until oil has heated. Watch it closely!
- Sprinkle potatoes with garlic salt, oregano, and blackened seasoning
- Take pan out of oven and carefully arrange potatoes on top of oil in a single layer.
- Place fries in oven on middle rack and cook for 5 minutes on low broil or until golden brown.
- Turn fries over and cook for an additional 3-5 minutes or until golden brown and fork tender.
Notes
For even crispier fries, turn on oven to 350 degrees and cook fries for 20 minutes or until they have reached your desired crispiness.
