Funfetti Cookie Sandwiches

 Funfetti Cookie Sandwiches are simply made with a boxed cake mix, then filled with buttercream frosting. Perfect for birthdays, parties and celebrations!

There’s a few special things about the chewy Funfetti Cookie Sandwiches that we’re sharing with you today.  

  • Preheat the oven to 350ยบF.
  • Make the cookie dough. In a small bowl, use a hand mixer to mix the cake mix, egg, cream cheese and butter until it is all well combined. Add the pink food coloring if desired.
  • Roll into balls. Roll the dough into about 44 1-inch balls. Roll the cookie dough balls in sprinkles, then place them on the prepared baking sheet. Gently press down on the top of the balls to slightly flatten them. 
  • Bake the cookies. Bake for 10 minutes. Move the cookies to a wire rack to cool.
  • Make the frosting. In a stand mixer bowl, with the mixer on medium speed, whip the butter for 2-3 minutes until it is almost white in color.
  • Add in the powdered sugar, vanilla and 1 ½ tablespoons milk. Add a drop of food coloring, if desired. Beat on low speed for 3-5 minutes, adding in another ½ tablespoon of milk if the buttercream needs to be thinner. 
  • Assemble the cookie sandwiches. Spread or pipe frosting on half of the cooled cookies. Wilton tip 1M makies a pretty swirl. Place another cookie on top of the frosting to make sandwiches.

Recipe Variations

  • If homemade frosting sounds like too much work for cake mix cookies, use your favorite store-bought frosting. Really…it’s OK. We all need shortcuts at times!
  • Leave out the food coloring if you’d like.
  • Roll the cookie dough balls in nuts instead of sprinkles.
  • Don’t want funfetti cookie sandwiches? Try any cake mix cookie sandwiches by switching the flavor of cake mix. Try chocolate, spice cake or even lemon. The cake mix makes an irresistible chewy cookie.

Storage Instructions

Store the cookies in an airtight container at room temperature for up to 48 hours.

The cookies freeze well in an airtight container, too! Freeze for up to 2 months.

We served these Funfetti Cake Mix Cookie Sandwiches to a whole gang of kids and let me tell you…they went fast. After all…who can resist sprinkles?

For the cookies:

  • 1 Pillsbury Funfetti cake mix
  • 1 large egg
  • 4 ounces cream cheese softened
  • 1/4 cup unsalted butter melted
  • Pink food coloring
  • 3/4 cup sprinkles

  • Spread or pipe frosting on half of the cookie. Place another cookie on top of the frosting to make sandwiches. Store in an airtight container at room temperature.

Notes

  • Although I usually use salted butter in baking, the cake mix already has a solid salt content, so I prefer unsalted butter in this recipe.

Can you use the Betty Crocker Rainbow Cake mix in replace of the funfetti cake mix. We don’t have the funfetti cake mix readily available to us. Thank you.

HI! Thank you for the recipe! I didn’t have any food coloring, so I added a packet of unsweetened kool aid powder (strawberry). Not only did it add the color I wanted it also made the cookies a bright strawberry flavor that really complimented the lemon frosting I put inside. I think I may make other variations going forward! They were a big hit at the picnic I brought them to. Thanks again!

Can I use something else aside from cream cheese ?

These look awesome, my daughter saw them and instantly decided she wants theses instead of cupcakes for her birthday. We just mixed up the cookie dough but it is way too sticky to roll. I put the dough in the refrigerator hoping that will help make it less sticky. Do you have any other tips or suggestions? Your cookies look beautiful and I want ours to as well.
