Do you love meatloaf? I don’t make meatloaf enough, but I LOVE it. I don’t care if others are haters. I’ll take it made in a skillet meatloaf or in the slow cooker meatloaf and even Mexican blend meatloaf. There are so many different ways to make meatloaf…and today we have a new one for you to try!

What is Hawaiian Meatloaf?

I came across this Hawaiian meatloaf recipe in one of my favorite old church cookbooks dated 1977. This cookbook comes from a church just down the road where I grew up so I know several of the women who submitted recipes. Every single recipe I’ve tried has been amazing.

This unique meatloaf recipe caught my eye because….pineapple chili sauce glaze. Although I don’t generally like meat and fruit mixed, I fell in love with this meatloaf immediately because of that sweet and tangy glaze.

How to Make Hawaiian Meatloaf

Hawaiian meatloaf is one of the easiest dinners to make. The most important step is to make sure you have enough meat defrosted and ready to form into a loaf. We make this meatloaf with ground chuck (we try to buy 85/15 mix). Ground chuck is not as fatty as ground beef but still has amazing flavor.

  • Prepare. Preheat the oven to 350ยบ Fahrenheit. Spray a shallow baking dish (at least 7×11″). Make sure the baking dish has sides to catch juices.
  • Make the meatloaf mixture. In a large bowl, combine the beef, onion, egg, breadcrumbs, salt, pepper and chili sauce. Mix until combined.ย 
  • Shape the loaf. Shape the meat into a loaf and place into the prepared baking pan.
  • Bake. Bake in a preheated oven for 55-60 minutes or until the internal temperature reaches 160ยบ Fahrenheit.ย 
  • Make the pineapple glaze. In a small bowl, mix together the crushed pineapple and chili sauce. Brush this sauce over the top of the meatloaf after an hour of cooking and return to the oven for an additional 15 minutes.ย

Don’t over mix the Hawaiian meatloaf. The more you handle the meat, the more you are compressing it which makes it tougher. It may help to beat the egg in a small bowl first so that it mixes in easier. If you don’t mind getting your hands messy, the best way to mix is by hand.

Do you cover meatloaf when baking?

We do NOT cover our meatloaf while it is baking. If you watch the temperature closely, it should not be dry. And adding the glaze at the end of baking helps seal in those juices.

How do I know when my meatloaf is done?

According to the FDA, the internal temperature of any ground beef recipe should be 165ยบ Fahrenheit. Use a thermometer to test the meatloaf to make sure it is measuring done.

Why does my meatloaf always fall apart?

The key to making Hawaiian meatloaf that does not fall apart is to make sure it has a binder to bind the ingredients together. This recipe calls for both eggs and bread crumbs which act as a binder to hold the ingredients together. If your meatloaf is falling apart, it’s a sign that there may be too much liquid in the recipe.

How long does meatloaf last?

Hawaiian meatloaf is best when used within 3-4 days of baking when stored in the refrigerator.

Heat any leftovers in the microwave, or pan fry meal size slices in a skillet to reheat.

Ingredients
 

For the meatloaf:

  • 1 1/2 pounds ground chuck
  • 1/4 cup minced onion
  • 1 large egg
  • 1/2 cup dry bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup chili sauce

For the topping:

  • 1/4 cup crushed pineapple (drained)
  • 1/4 cup chili sauce

Instructions
 

  • Preheat the oven to 350ยบ Fahrenheit. Spray a shallow baking dish (at least 7×11"). Make sure the baking dish has sides to catch juices.
  • In a bowl, combine the beef, onion, egg, bread crumbs, salt, pepper and chili sauce. Mix until combined. 1 ½ pounds ground chuck, ¼ cup minced onion, 1 large egg, ½ cup dry bread crumbs, 1 teaspoon salt, ¼ teaspoon black pepper, ⅓ cup chili sauce
  • Shape the meat into a loaf and place into the prepared baking pan.
  • Bake for 55-60 minutes or until the internal temperature reaches 160ยบ Fahrenheit. 
  • In a small bowl, mix together the crushed pineapple and chili sauce. Brush this sauce over the meatloaf and return to the oven for an additional 15 minutes. ¼ cup crushed pineapple, ¼ cup chili sauce
  • Allow the meatloaf to rest 5 minutes before slicing and serving.
