For all of you busy moms out there, you’re going to love this meatball soup with potatoes! It is quick to throw together and easily made in the slow cooker. The best part of about this meatball soup recipe? My kids like to take the leftovers in their lunch! Healthy school lunch win.

Although this recipe uses frozen meatballs, you can make your own ground beef meatballs, cook them and freeze them, then use them in this recipe.

Ingredients in Meatball Potato Soup

Key ingredients:

  • Start with frozen meatballs. Find a quality frozen meatball made from ground beef, ground pork or even ground turkey. I prefer gluten free meatballs. When you find a good quality meatball, they can be great to keep on hand for a quick protein boost.
  • Red potatoes are best in soup. Red potatoes are waxy and tend to hold their shape well during cooking. Russet potatoes will fall apart as they cook. My family prefers when I peel potatoes, but leave skins on if you’d like.
  • Celery, onions and carrots. The base of any good soup recipe!
  • Salt, pepper and fresh thyme. Thyme is the unique flavor and fresh herbs is what its all about.

How to Make Meatball Potato Soup

  • Dice all of the veggies and place them in a slow cooker.

  1. Add the meatballs, potatoes, Worcestershire sauce, beef stock and seasonings.

  1. Cover and cook on low for 6-8 hours or on high for 4-5 hours.

Meatball Potato Soup in the Instant Pot

Yes! Add all of the ingredients to the Instant Pot. Seal and set on high pressure for 15 minutes, then use a quick release to release the pressure.

Meatball Potato Soup in a Dutch Oven

This meatball soup with potatoes can also be made on the stove top in a dutch oven or other large soup pot with a lid.

Place all of the ingredients in a soup pot, then place over medium high heat. Bring to a boil, then reduce temperature and allow the soup to simmer, covered, until the potatoes and carrots are tender.

What to Serve with Soup

Some of our favorite breads are buttery soft rolls, buttermilk bread, honey wheat bread, and fluffy biscuits.

Soup is good served with salad also. Try our antipasto salad, broccoli salad, strawberry spinach salad or cucumber tomato salad.

Storage Instructions

Store leftover soup in an airtight container in the refrigerator for up to 4 days.

You can also place leftovers in the freezer for up to 6 weeks.

Ingredients
 

  • 6 medium red potatoes (peeled and chopped)
  • 15-20 frozen meatballs
  • 1 yellow onion (chopped)
  • 3 carrots (peeled and chopped)
  • 2 stalks of celery (chopped)
  • 2 teaspoons worcestershire sauce
  • salt and pepper to taste
  • 4 cups beef stock
  • 6 sprigs of fresh thyme

Instructions
 

  • Chop all of the veggies.
  • Add all of the ingredients into a slow cooker. Mix together and cover.
  • Cook on high for 4 hours or low for 6-8 hours.
  • Serve warm.

Notes

This soup is simply flavored, but if you’d like more flavor, try a couple cloves of garlic, Italian seasoning, a sprinkle of Parmesan cheese and a garnish of fresh parsley.
