Eggnog Bread Recipe
What does eggnog taste like? It has such a comforting flavor. I think it has a creamy custard flavor with a hint of vanilla and nutmeg. This bread has both nutmeg and cinnamon, giving it a warm flavor. We used rum extract in the bread and in the glaze for hint of rum flavor. If you’d like, you can use vanilla extract instead.
Can you bake with eggnog?
Yes! We’ve been having fun finding recipes that call for milk and replacing it with eggnog. In some cases I reduce the amount of sugar by a little bit since eggnog is sweet. But in general, eggnog is a great replacement for milk.
How to Make Eggnog Bread
The important thing to remember when making a quick bread is to not overmix the batter. Because of this, it’s best to use two bowls. Mix together the wet ingredients in one bowl and the dry ingredients in another. Then add the dry ingredients to the wet and mix gently, folding the batter together, just until it is combined.
We bake this bread in a metal loaf pan that is 9×5″. If you use a smaller or bigger pan, it will affect the baking time. Don’t open the oven until the bread looks done. Turn on the oven light and make sure it is puffed up in the center. If you open the oven too soon, the bread may fall in the center.
We like to eat this bread fresh, so allow it to cool for 10 minutes in the pan, then turn it out onto a wire rack. Frost it as soon as it has cooled down slightly. It’s delicious with a cup of coffee!
Eggnog Glaze
Powdered sugar glaze is one of the easiest icings to make. Just get a bowl and a whisk. Whisk together a cup of powdered sugar, a few tablespoons of eggnog and a touch of rum extract. Whisk until the frosting is smooth.
If you have trouble with the powdered sugar clumping, sift the powdered sugar as a first step so you know there aren’t any small clumps.
*Add the eggnog one tablespoon at a time until you get the consistency you’d like. If you add too much too soon, it will be extra runny and not stay on the bread.*
What can you make with leftover eggnog?
Try making cheesecake, cinnamon rolls, bread, pancakes, muffins or even coffee cake or pumpkin pie. The possibilities are endless!
