Grilled Shrimp Foil Packets

This is a special recipe because it is our first ever shrimp recipe up on Tastes of Lizzy T! As the kids get older, they are getting more adventurous in their eating and want to try new things. If you love shrimp, be on the lookout for more easy shrimp recipes, but since it’s summer, let’s start with a grilled shrimp recipe!
What spices are good for shrimp?
Gentle herbs and spices are generally good for shrimp so the sweet flavor can come through. Any spices are good though, so for this recipe we chose onion powder, peppers, thyme, paprika and rosemary. It’s a little bit of a “bigger” flavor since it is covering corn and potatoes as well. You can go cajun style for this recipe, or even just do butter and garlic if you’d like!
How do you make foil packets?
Take a long piece of foil and fold it in half (width-wise) so that you have a double layer. Place your shrimp, veggies and potatoes in the center of the foil, then fold over one side, fold the edges together and press to seal. Fold up the remaining 2 edges to make a small packet. Don’t pack the foil together too tightly. You want room for the steam to escape.

How long do you cook shrimp on the grill in foil?
The amount of time these packets take to cook will depend on how large your shrimp pieces are. We used medium-size shrimp that we already cooked and peeled, so we just needed to heat them through and make sure the potatoes were cooked completely. This took about 20 minutes. If the shrimp you have are salad-style and are tiny, you may want to cook the potatoes longer in the microwave so the packets don’t have to be on the grill as long.
How to Make Grilled Shrimp Foil Packets
- Pre-cook the potatoes in the microwave until they start to get tender. The exact time will depend on how big the potatoes are, but you want them to be at least half way cooked so they don’t take too long on the grill.
- Slice the corn off the cob, or cut the whole cob in chunks, depending on the look you’d like.
- Preheat the grill to 375 degrees.
- Make your foil packets, one packet per person with as much shrimp, potatoes and corn as you’d like. Add about 2 tablespoons of butter per packet and 1 teaspoon of seasoning. You can adjust this amount depending on what you think you’d like best.
- Grill the packets for about 20 minutes. Keep the packets sealed until you are ready to serve them.

Ingredients
For each Packet:
- 5-7 medium sized shrimp (cooked and peeled)
- 3-4 small red potatoes
- 2-3 sliced pieces of corn
- 2 tablespoons butter
- 1 tablespoon seasoning (recipe below)
Seasoning Ingredients:
- 1 tablespoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon white pepper
- 1 teaspoon thyme
- 1 tablespoon paprika
- 1/4 teaspoon rosemary
Instructions
- Heat the grill to 375 degrees.
- Poke the small red potatoes once or twice with a fork, then place them in the microwave for about 3-5 minutes. This allows the potatoes to start cooking and will ensure they are fully cooked when you remove them from the grill.
- Place a long piece of foil on your workstation and fold it in half width-wise. Add the shrimp, corn, and potatoes to the center of the foil. Add in the butter and of butter, and then sprinkle about a tablespoon of seasoning overtop. Cover the ingredients with the foil and secure packet loosely.
- Place on heated grill and cook for about 20 minutes or until heated through and the potatoes test done.
- Carefully remove from the grill and keep foil wrapped tightly until you are ready to serve.
