Why this is the best homemade turkey sausage:

  • Lean.  Buy lean ground turkey. Ours was 93% lean.
  • No sugar. Many sausages have some type of sugar in them. Don’t get me wrong, I love sugar in my cookies, but I don’t need it in sausage. 
  • Simple.  These seasonings are pantry staples.
  • Full of flavor.  Adjust the amount of pepper in this recipe to fit how spicy you like your sausage.
  • Freeze well.  Freeze the patties (either cooked or uncooked) and pull them out when you need them.

Turkey Sausage Ingredients

There are just a handful of simple ingredients:

  • Ground Turkey. Use lean ground turkey breast for best results. You can also use ground chicken or ground pork if you prefer.
  • Ginger, Sage, Cayenne Pepper. This spice mixture gives such an amazing savory flavor.
  • Salt & Pepper. Sausage is a salty, but adjust the salt to your preference.

Make Turkey Sausage in 4 Steps

  • Place the ground turkey into a large bowl. Sprinkle the seasonings over the ground turkey
  • Mix well. 
  • Form the seasoned turkey mixture into patties (about ⅓ cup per patty).
  • Heat a large skillet over medium-high heat with drizzle of olive oil or coconut oil. Once the skillet is hot, place the patties in the skillet and fry on one side for 2-3 minutes, then flip and fry on the other side until no longer pink.

Recipe Variations

Making your own sausage flavors is part of the fun! Here are two ideas:

  • Spice It Up: If you love a bit of heat, consider adding a pinch more cayenne pepper or even a dash of red pepper flakes to the mix. 
  • Herb Variations: While sage is a classic for homemade sausage, feel free to experiment with thyme, garlic powder, rosemary, or a combination of herbs.

Can you freeze turkey sausage?

Yes. For freezing, place uncooked patties between layers of parchment paper and store them in an airtight container or freezer-safe bag.

They can be frozen for up to two months. When youโ€™re ready to enjoy them, simply thaw overnight in the refrigerator and heat on a microwave-safe plate or on the stovetop.

Ingredients
 

  • 3 pounds lean ground turkey
  • 2 teaspoons ginger
  • 4 teaspoons salt
  • 3 teaspoons sage
  • 1/2 teaspoon cayenne pepper
  • 4 teaspoons black pepper

Instructions
 

  • Place the ground turkey into a large bowl.
  • Sprinkle the seasonings over the ground turkey and mix well.
  • Form the seasoned turkey mixture into patties (about ⅓ cup per patty). Make the patties thin. They’ll shrink up slightly during cooking and end up being thick patties.
  • Heat a large skillet over medium-high heat with drizzle of olive oil or coconut oil. Once the skillet is hot, place the patties in the skillet and fry on one side for 2-3 minutes, then flip and fry on the other side until no longer pink. Use a meat thermometer to test the internal temperature. The sausage is done when the temperature is165ยบF.

I just made a similar recipe yesterday and loved em! I froze them between wax paper, small patties and they thawed very quickly for breakfast this am. I used fresh Sage and thyme and some chili flakes and a teaspoon of brown sugar. Eager to try this recipe as more convenient Pantry staples.

I’ve tried to make turkey sausage using lean ground turkey and it came out really dry. Do you do anything special, like adding some kind of fat to yours?
