My Grandma made the best cookies called snickerdoodles. We make them often and even set them out for Santa every year. Since it is summer, we mix in colorful sprinkles and give them a makeover as funfetti ice cream sandwiches. Aren’t they the prettiest?

Tips for Making the Cookies

  • Plan ahead. The cookie dough will need to chill for at least 20 minutes before baking. This is to ensure the cookies don’t spread too much.
  • Use room temperature butter. Set out your butter at least an hour before mixing the cookies. This will ensure your butter is at the correct temperature for mixing. You want the butter to give slightly when you touch it, but not be so soft that it is melty.
  • You can refrigerate the cookie dough in a ball…or you can scoop the cookie dough first, then refrigerate so you don’t have to work with dough that is too hard.
  • Don’t overbake! You want to remove the cookies from the oven before the get brown. This will help keep your cookie sandwiches easy to bite into.

How to Easily Fill Ice Cream Sandwiches

There are two options for making ice cream sandwiches:

  1. Freeze the cookies before filling. That way when you press the ice cream between two cookies, the cookies will not bread.
  2. You can also soften the ice cream, spread it in a 9×13 pan and freeze. Then use a cookie cutter the same size as the cookies to cut circles of ice cream to easily sandwich between the cookies.

Make Ahead Ice Cream Sandwiches

You can make a bunch of these ahead of time, wrap them in plastic wrap, store them in the freezer and have them ready to go at a moment’s notice. Neighborhood kids will be thrilled to come in from outside to enjoy one of these as a snack!

  • Preheat oven to 350 degrees Fahrenheit.
  • Cream together the butter and sugar in a stand mixer on high (or with a hand mixer).
  • Add the egg and vanilla and beat until smooth.
  • In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt and sprinkles.
  • Add the flour mixture to the butter mixture and beat on low until a smooth dough is formed. Dough will be very thick.
  • Chill the dough for 20 minutes.
  • Using a cookie scoop, drop cookie dough onto baking sheets lined with parchment paper or silicone baking mats. Make 16 cookie balls.
  • Bake for 10 โ€“ 12 minutes, rotating halfway through baking time.
  • Allow the cookies to cool on baking sheets.
  • *Once cookies are completely cooled, make ice cream sandwiches. Place about ยผ cup of ice cream between each of two cookies for one sandwich.
  • Wrap each sandwich individually in plastic wrap and allow to freeze for at least four hours before serving.
  • The ice cream sandwiches can be stored in the freezer for up to one month.

This cookie recipe will not keep its shape during baking. The cookies will spread. If you’d like a ice cream sandwiches in the shape of cookies, try this soft cut out cookie recipe.

Super cute idea! I decided to try but wish I had not put the sprinkles in the mixer because now the cookies arenโ€™t white theyโ€™re a brownish color. I would suggest to fold the sprinkles in after everything is done in the mixer. They do taste good!
