It’s the time of year when berries come out in full force. Fresh berries abound and we eat them by the handful, throw them in a bowl of hearty granola, and bake them into every triple berry recipe imaginable.

This Blueberry Oatmeal Bars recipe, however, is perfect for those times when berries aren’t plentiful, but you still are craving that blueberry flavor. Why? Because it uses blueberry pie filling.

What I love about this recipe is that there are only 6 ingredients and most likely you have them in your pantry. If you don’t have blueberry pie filling, you can use whatever flavor of pie filling you happen to have. Apple, cherry…even raspberry. Mmm…

This recipe is simple because it takes only 10 minutes to whip up. The butter, oatmeal crust is the same mixture that goes on the top. Fruit filling gets sandwiched in the middle and fills every bite.

I like to stuff my oatmeal bar recipe full of pie filling, which then makes it a little hard to eat as an actual “bar” held with your hands, but is 100% perfect with a scoop of ice cream on top. Eaten with a spoon, of course.

If you’d like your oatmeal bars to be easily portable, I recommend using your favorite fruit jam or jelly for a filling, or putting in less pie filling.

But if you’re like me and can’t get enough ice cream…I’ll just leave this here…

Blueberry Oatmeal Bars

  • In mixing bowl, combine flour, oats, brown sugar, and baking soda.
  • Using a pastry blender, cut in the cold butter cubes until the mixture resembles coarse crumbs.
  • Reserve ½ cup of the flour mixture and set aside for the topping.
  • Spray a 9×9 baking pan with cooking spray.
  • Press remaining flour mixture into the bottom of the prepared pan.
  • Spread the pie filling or jam on top of the flour.
  • Sprinkle with reserved flour mixture.
  • Press the topping gently into the jam with the palms of your hands.
  • Bake at 350F for 30-35 minutes or until the top is golden brown.
  • Allow the bars to cool completely, then cut and serve.

Notes

*Use whatever type of pie filling or jam that you’d like. If you use a whole can (21 ounces) of pie filling, your bars will turn out more like a cobbler. If you choose to use jam, the bars will be firmer.

Iโ€™ve made these 2 times and they were great! I didnโ€™t have pie filling, so I used fresh blueberries.
