Mini Chocolate Chip Orange Quick Bread
Hi there, it’s Sherri fromย The Well-Floured Kitchen. Orange is one of my favorite flavors to bake with, especially at this time of year. I’m not sure if it is the same elsewhere, but here in the Massachusetts I almost can’t find an out of season orange, and if I do they aren’t very good. Like a kid waiting for Christmas, I wait for the supermarket to finally overflow with all things citrusy. Add in a little chocolate and that’s it, I’m completely smitten.
So today I am sharing some mini orange quick bread loaves that can be shared. These cute little guys can be popped in a bag and tied up with some twine for a hostess gift, or a little something sweet for your party guests to take home. The extras could also be stashed in the freezer and pulled out on a crazy December day. You know they are coming!
I have a silicone mini loaf pan that makes 8. I have quite a few silicone pans, but for whatever reason I find the the mini loaves are the hardest to pop out. I generally give the pan a light greasing and it works much better. Of course, if you are using any other type of mini loaf pan, they will also need to be lightly greased. The breads are a lovely size, just right for one person.
So many layers of flavors are hiding in these little mini chocolate chip orange quick breads. First, I zested an orange peel because I just love the fresh, beautiful flavor zest brings. I zest directly over the bowl of dry ingredients using a microplane. Be careful not to include any of the white part of the peel, it is bitter. I also used a combination of orange and vanilla extracts, which complement each other. The bulk of the orange flavor is the orange juice, which you could squeeze fresh {with that zested orange!}, but I want this recipe to be super easy so I use store bought juice ๐
I decided to make this a one bowl recipe, because I know the holidays are so busy and less mess is always best! My little trick for making this orange quick bread in one bowl is that I add the eggs into the measuring cup with the milk (or oil), and beat them with a fork before adding to the dry ingredients. Be sure to use a liquid measuring cup for the milk, oil and orange juice. They are different than dry measuring cups. With the eggs already beaten, the wet and dry ingredients come together quickly with no risk of over-mixing. Combine just until the flour is moistened and you will have the most tender, melt in your mouth orange quick bread!

Ingredients
- 2 Cups White Flour (9 Ounces)
- 1 Cup Granulated Sugar (7 Ounces)
- 1/2 Teaspoon Salt
- 2 1/2 Teaspoons Baking Powder
- Zest of ½ an Orange
- 1/2 Cup Vegetable Oil
- 2 Large Eggs
- 3/4 Cup Orange Juice
- 1/2 Cup Milk
- 1/2 Teaspoon Orange Extract
- 1/2 Teaspoon Vanilla Extract
- 3/4 Cups Chocolate Chips
Instructions
- Preheat the oven to 350 degrees. Grease a mini loaf tin with vegetable oil.
- In a large bowl whisk together the flour, sugar, salt, baking powder and orange zest until well combined.
- Crack the eggs into the measuring cup with the milk. Beat them with a fork. Add the egg/milk mixture, orange juice, oil, vanilla and orange extracts into the dry ingredients. Stir gently with a spoon just until the flour is moistened. Add in ½ Cup chocolate chips.
- Divide the batter between 8 mini loaf pans. Top with the remaining ¼ cup chocolate chips.
- Bake for 28-33 minutes or until a toothpick inserted into the center of one of the loaves comes out clean. Allow to cool in the pans for 10 minutes before removing to a cooking rack.

Made these last night and they are super tasty and easy to make! Thank you!!! I used semi-sweet chocolate chips and used a total of four mini loaf pans (5.75×3.25×2.25). Baked for 31 min and came out just right with a nice dome on top. Next time (because there will be a next time for sure!) Iโll probably zest the entire orange and put half the chocolate chips on top. I think because I was using 4 pans instead of 8 the chips sunk quite a bit, so should help with distribution. Thank you for the lovely recipe!
