Easy Frozen Lemonade Drink

Yesterday I checked off an empty box on my bucket list.
I ran a half marathon. 13. 1 miles. All run at one time with my two little feet. And I’ve lived to tell about it, with this frozen lemonade in hand.
Running a half marathon wasn’t originally on my bucket list, but it was on Matt’s list. Since I’m all about supporting him 100%, it quickly got added to my list. The race was physically hard, but mentally even harder. After thinking all the thinks that I could possibly think while pounding the pavement, all that is left to imagine is how much I want to sit down with a cool drink and a huge burger.
You can bet that when we got home I whipped up some of this frozen lemonade. It takes 5 minutes, is made in a blender, and you can easily adapt the amount of sugar to your tastes.
This was actually the first time I had ever made a lemonade drink with fresh lemons. Not only does this recipe have the juice of lemons, but it also has lemon zest. This past year I’ve been all about lemon zest. I’ve added it to popsicles, muffins and jam. I never knew how easy it was to zest a lemon, or how much of a fresh flavor it brings to any food.
When you’re making this recipe, you’ll simply need 2 lemons, sugar, ice, water and a blender.
You’ll start by zesting 1 lemon, then peeling the two lemons. Be sure to get off as much of the white part of the lemon as possible since it doesn’t blend easily and can add a bitter flavor to your drink. There’s no need to spend a ton of time getting the white flesh off, just peel off the big chunks and you should be fine.
Our household has varying preferences as far as what the sweetness of lemonade should be. Kinslee prefers very tart lemonade….Braden is 100% the opposite. And I’d say I’m in the middle! I added ⅓ cup sugar to our lemonade. If you’d like it sweeter, start with ½ cup sugar. Then add more sugar a tablespoon at a time until it is the taste that you’d like.
My kids love this blended frozen lemonade and I’m happy to make it for them since it only takes less than 5 minutes in the blender. Serve it while you are waiting for your burgers to grill, after an afternoon swim, for a bedtime snack…

Ingredients
- 2 medium lemons
- Zest of 1 lemon
- 1/3-1/2 cup granulated sugar to taste
- 3 cups ice cubes
- 1 1/2 cups cold water
Instructions
- Zest a lemon and set aside the zest. Then peel the lemons and remove any seeds. Discard peels and seeds.
- Add the lemons, zest, sugar, ice and water to a blender and pulse until it is blended to the consistency you'd like.
- Blend longer for a smoother frozen drink, and blend less for a icier drink.
