Summer = all things sweet corn. One of my fond memories of summers past was getting sweet corn from my grandpa’s garden. And if he didn’t have enough, we’d drive down the road a mile or two to a farm that sold sweet corn at a little stand in their front yard.

This Corn with Chili Butter Recipe is a grown up way to enjoy that sweet summer corn.

Why roast corn in the oven?

Oven roasting corn on the cob with husks on protects that sweet, fresh, corn flavor. The husks allow the corn to be steamed as it cooks in the oven, locking in the moisture and the flavor.

Many times in the summer it can be so sweltering hot that you don’t want to turn on your oven. This is a challenge to try oven roasted corn and convince you that it is worth turning on the oven for.

How to Make Corn with Chili Lime Butter

  • Prepare. Preheat the oven to 350ยบF.
  • Bake the corn. Place the corn (with husks) on the baking sheet. Bake on the center rack for 45 minutes or until the corn is tender. Allow the corn to cool for 5 minutes.
  • Make the butter mixture. In a small bowl, combine butter, lime zest and fresh lime juice, seasonings and garlic. Mix well.
  • Butter the corn. Peel back the husks and silk on the corn and use a pastry brush to slather the butter over the warm corn.

You can grill this chili lime corn, too! Place corn directly on the grilling grate over medium high heat and roast for 40-45 minutes, rotating the corn several times during cooking. Grilled corn has a unique flavor you’ll love.

Make it a meal.

This corn with chili lime butter is a summer staple. It is a perfect side for our lemon-lime chicken, garlic butter steak, bbq ribs or turkey burgers. Add sides such as classic potato salad, and/or 3 bean baked bean casserole. Oh, and have a buttermilk biscuit to go with it as well.

You can even use leftover corn on the cob to make this jiffy corn casserole, black bean and corn salad or on top of our crockpot chicken tacos.

Ingredients
 

  • 10 ears fresh sweet corn with husks

Chili Butter

  • 1/2 cup salted butter softened
  • zest & juice of 2 limes
  • 2 teaspoons ancho chili pepper
  • 1 teaspoon chipotle pepper
  • 4 garlic cloves minced
  • 1/4 cup freshly chopped cilantro for garnishing, optional
